they have 6 years to chase the money, the fact you spent it in 4 months doesn't change the fact that you owe it.

People are entitled to make mistakes. This sounds like a keying error by a checkout operator working in a challenging environment at the moment. Their genuine mistake shouldn't end up costing their employer £3,000.
You may have spent some of the money by now, but equally, that's your error for not keeping track of your account for a month. If you had, you would have seen £3,000 you thought you'd spent up to a month earlier. Perhaps they'll accept some of the money now and some after payday?3 -
You expected to pay over £3k and were delighted when you found out you were wrongly charged £22.50.
So you knew you had underpaid.
Now you do not like the answers you have been given on here.
Did you sell the items to your customers for £22.50? I bet not.1 -

Perhaps a software glitch or update that defaulted to the wrong currency, the error being the operator not noticing, then. Either way, an honest mistake.
Anyway, I'm not sure you've got the answer you were hoping for, but you do owe them the money (or the jewellery) so best to work with them as to how you get it to them, even if it's half now and half next week after payday.1
