checked another phone I had in my orders from last year and the same, no IMEI/Serial number there either, keep that summary safe :P

thanks to you i have now got the IMEI number off my phone and will keep it safe just in case!1 -
I've finally been able to get the IMEI from GiffGaff and tried to open a claim, but they consider my case a lost in transit situation and not stolen, because I was not in possession of the phone at the time. So now my last chance is to get my credit card company to have a go as well at getting my money back... If this fails, then that will be it...
Lesson learned, If a phone is stolen during an Amazon Return, the customer is the one at fault apparently...0 -

Have you asked Giffgaff to make sure it's blocked? Have you given the IMEI to the Police asked if they can check it's blocked and if anyone tries to use it will they pursue it?
What have Hermes had to say?
When you use Amazon chat, can you get an email record of the chat? If so, I'd do that telling them on chat someone is not responding to your emails, you have the IMEI now from your Network and you've sent an email stating you are going to take them to court for the £700 and you expect a reply. (Anything is worth a try even if you don't actually do that!).
If your insurers aren't going to be more helpful, I'd try finding a different one! Who are they anyway?
