Are the actual readings for the bill to 31 July correct (40866 & 19753)?
If so, it looks like the estimated readings before have always been low and the gap between estimated and actual growing over a period of time. This results in the very large bill when the actual reading is then taken.
I do think, in these circumstances, the electricity supplier should show some forebearance and grant consideration of circumstances. At a very minimum a payment plan and at the best to write off the sum in total. Something in the middle that is a combination of the two would be fair. Maybe others can advise on the best approach towards getting this outcome.
Has the OP made enquiries of CAB or other support networks? Can the OP's social worker assist?1 -

I would have thought that the OP's case worker, social worker, a friend or even the CAB are in a better position to assist rather than random guesses or advice from this forum.
Non of us know exactly what went on, why or when so it really needs someone who can get a "hands on" look at the full circumstances.

Court is probably not the right route to take. Citizens Advice sounds like a good starting point as someone's going to have to calmly plough through all the bills to untangle what's been going on.
However, those rates are terrible, disgusting. I'm about to move onto Symbio's variable tariff at 10.9p/kWh, 21p/day.
So first priority is help to investigate the bills and second priority is to plot an escape from your extortionate supplier, but this may depend on payment plan options resulting from step 1. Getting help with this will hopefully lower the anger you feel and give a feeling of regaining control. Maybe in the future you can focus on regular meter readings to keep an eye on consumption and bills, and maybe some checks to make sure that electricity isn't being wasted in your flat.3 -
OP - anything that produces a lot of heat for a long time will guzzle power e.g. tumble dryer, heating (air or water), oven. Not so much kettle or toaster as they are only on for a brief time.Now a gainfully employed bassist again - WooHoo!1

I only have my fridge and freezer on all day and it class A. So it don't used a lot of electric . . And for my heart only come on in the winter time . And my water boiler is on all day aswell0

The the OP says they moved in on 4th June. Which year? All the bills shown cover period starting May 2019. The OP should have taken meter readings on the day they moved in, and should only be charged for energy from then on.0

- IF you mean a hot tank with an immersion heater then leaving it on all day is a BIG mistake. You have an Economy 7 tariff so it will be using the full-price daytime rate. You're on a horrifically expensive tariff anyway, so your bills will be even higher. The immersion heater should be on a separate circuit controlled by the meter that only comes on at night; if there are two heaters it will be the lower one. The one in the middle will have a switch (possibly labelled 'Boost') and this should used only if you've run out of hot water during the day, and it should NEVER be left on all the time.
- IF you really do have a genuine electric boiler (probably feeding wet radiators or a wet underfloor system) then you certainly shouldn't be on Economy 7. The boiler will have to use daytime electricity so it will be extremely expensive even at the best of times, but Economy 7 will make it even worse because the daytime E7 rate is even more expensive than the ordinary single rate.

On Monday please contact your Social worker and ask for help in sorting out your bills - for the moment don't worry about what tariff you are on or what's switched on on off - all the good advice is only serving to confuse you.
You MUST get this bill sorted out first.Never pay on an estimated bill. Always read and understand your bill2
