...and a few marrows!
I was on furlough earlier in the year, and managed to prepare the garden really well. As a result, this week so far I have picked 6 courgettes and 2 medium marrows, and I think they're speeding up! I've got a feeling we're going to get fed up fairly quickly. My usual methods are fried with onions (either sliced or spiralised), roasted with other veg in a traybake, sliced and thrown on the BBQ or diced into a sauce. The marrows I'll stuff with a mince filling or roast in rings.
Now I've written it, that does look quite varied, but what other things can they be used for? Do they freeze, or do they go mushy?

I’ve made courgette fritters and quiche by grating them and also use to bulk out bolognese sauce.Why pay full price when you may get it YS2

I grate them and put them in a frittata.

Quarter each one length ways, drizzle with olive oil, dust in a mix of grated Parmesan, garlic powder and herbs and bung in the oven till brown, cheesy courgette fries 😁Note to self - STOP SPENDING MONEY !!

Chutney, they make a very nice chutney if they get too abundant and because the skin is soft you don't have to peel them like you do marrows.2

i made this last night and used 3 courgettes, 3 went next door and there's 3 more in the fridge i'm frightened what i'll find when I go and water later

I make a sort of sloppy ratatouille comprising finely chopped onion, celery and garlic, finely sliced courgettes and a tin of chopped tomatoes.You can also add chopped red peppers, mixed herbs, a squirt or two of tomato puree, or dash of Worcester sauce, depending on taste. It freezes beautifully. It can be used as a side with meat or fish, on baked potatoes or as a base for a vegetable lasagna.3
