We use ours to make a Courgette Slice. It’s an Australian recipe and it’s delicious, it’s made with eggs, SR Flour, onion (I leave this out though as I’m intolerant), cheese, salt and pepper, oil and bacon or you can leave out the bacon if you’re veggie. It’s kind of like a frittata I guess. Very simple and very tasty. Once cooked it can then be frozen. In fact we’re having it for dinner tonight1

I made courgette pancakes for dinner, i halved the recipe and it still made four large ones,tomorrow I'll find out if I can reheat them

Root_85 mentioned a courgette(Zucchini) slice. I reckon this is possibly the recipe which was in the Australian Womens Weekly decades ago. I have never tried freezing it but on Root_85's recommendation will give it a go. Sometimes I make it in mini loaf tins for meal boxes at harvest time. If I am cooking it in mini loaf pans I sweat off the onion with a little oil in the microwave first,because of the shorter cooking time the onions would be too raw. It is a 250ml Australian measuring cup that I use. The recipe states 1/2 a cup of oil but I have actually cut it to 1/3 and it is fine. I use sunflower oil.375g grated unpeeled Courgette, 0ne large onion finely chopped, 3 rashers of bacon chopped, 1 cup grated cheddar,1 cup self raising flour,1/2 cup oil. 5 eggs. salt and pepper. Want it veggie? Leave out the bacon.Combine grated courgette, finely chopped onion, chopped bacon,grated cheese, flour, oil and lightly beaten eggs. Season with salt and pepper. Pour into a well greased Lamington tin( base measures 16cmx26cm) bake in moderate oven 30-40 minutes or until browned. Serves 4-6. A Lamington tin is about2 inches deep. I use a Pyrex Lasagne dish.2

I made a couple of jars of courgette pickle with green and yellow ones, including a round variety. A bit like piccallili, somebody commented. Think the recipe was Nigel Slater's in The Guardian and goes well with things like mackerel. I've been busy and missed going to the allotment for a couple of days and worried what I might find!

I've been making courgette and potato soup - double courgettes to potatoes, stock, small onion, blitz when cooked. Its delish. The receipe says add cheese but we use a table spoon of nutritional yeast instead. Hope this helps
