Picked six courgettes yesterday. Four already in the freezer. Liking all of your ideas.

And I also do a courgette pizza - bit of tomato passata, thinly sliced courgettes, mozzarella, and you can vary it with whatever else you have in the fridge. Usually olives in our house but sometimes ricotta, blue cheese, sun dried tomatoes from a jar.1 -
I grew round courgettes this year, they're really delicious and very tender so I've been slicing them and roasting with halved cherry tomatoes (I also have a glut of those). I quarter a courgette lengthways then slice it and roast it and the tomatoes on a tray with a splash of oil and a generous sprinkling of lemon juice. It's a really delicious side veg.2022. 2% MF challenge. £730/30002
