I noticed L1d1 had a vegan wellington for a good price. All their veg is 15p too! Thinking of batch cooking some veggie curry to take advantage of it.
Hope your walk with friends was a tonic for you.
Yes, trying to be money saving with what I get, I may have bought that. I looked at all the time consuming recipes and just thought, don't know what will be happening with relative, so, why am I piling on the anxiety of trying to cook something new, when things might not go to plan? Doing as much prep as I can between visiting relative....
Yes, I am thinking 'rain-walking' and speed talking is the new thing.... ha!"...when you have eliminated the impossible, whatever remains however improbable, must be the truth..."

Yes. I am looking forward to some sort of normal, and lovely food.... I have quietly ignored the scales now and won't go near the blasted things until the New Year....."...when you have eliminated the impossible, whatever remains however improbable, must be the truth..."

I am planning to put the frozen spuds straight in a hot oven with the Wellington (fan assisted electric 180 degrees) for around 40 mins, with the parsnips and chipolatas shoved in half-way through (both frozen). The vegan Wellington takes about the same time, so that means I only have to steam greens & warm up the gravy/root mash in the microwave.... in theory! Ha....
For those curious on prices:
L*dl Wellington £2.99 (probably 2 generous servings)
Veggies:
Frozen parsnips £1.20/450g
Fresh carrots £0.43/kg
" swede £0.55/about grapefruit size
" red onions £0.60/kg
" garlic £0.69
Maris Pipers £1.10/500g
Vegan gravy £1.60
Vegan mince pies £1.55 for 4
Soya cream £1?
Vegan cheese x 2 £2.30 x 2
Total around £16.41
Already had frozen cauli, broccoli, and sprouts in freezer & oatcakes (about £1.10). Pre-prepped some of pots, but still eating about 1/3 myself with meals. Used all swede with a dozen carrots for mash, still half a dozen carrots left. Garlic and onions are for stuffing and won't all be used, so should keep me going a few weeks. Greens and cauli, plus parsnips will be portioned out for the meal. Not bad! Aiming for a dessert that should bring it to just under £20 for the 3 of us. Plus point, relatives bringing bottle of wine, and I already have gin & tonic if they are still feeling festive....hic!"...when you have eliminated the impossible, whatever remains however improbable, must be the truth..."

That sounds fantastic! I got a vegan Wellington from Mr S as a backup if I couldn't get my usual 'no turkey crown'. I do vegan Yorkshires on Christmas day and maple parsnips. You've just reminded me to put maris pipers on my shopping list, so thank you!2
