What do you do with th fruit at the end of the process? I have just moved my redcurrant vodka from a leaky kilner type jar to bottles and now have the boozy fruit left... can I make it into jam?Man plans and God laughs...Perhaps travel cannot prevent bigotry. But by demonstrating that all people cry, laugh, eat, worry and die, it introduces the idea that if we try to understand each other, we may even become friends.0

Don't know about redcurrants - but with sloes, if you remove them at crimbo and put into a botttle of pale sherry, by Easter you'll have a delish dark licquer (sorry can't spell it)!0

Great idea Beedeedee - must try that. I stoned the damsons from the gin (using a cherry stoner - my latest toy and worth every penny) and made chutney from them (carefully labelled "Boozy Damson Chutney") which I am assured was delish (I have a friend who guinea pigs every new recipe)“the princess jumped from the tower & she learned that she could fly all along. she never needed those wings.”

Should be - my greengrocer has promised this week or next. So I make damson gin and then after Christmas I made the chutney using Delia's damson chutney recipe. The gin fumes were a bit fierce from the preserving pan to start with, but seemed to calm down as the alcohol boiled off“the princess jumped from the tower & she learned that she could fly all along. she never needed those wings.”

It's just the right time for making it. This year I'm making double because it's meant to improve with age, mine never lasts beyond Chrimbo.
