Okay, so you know to send the appeal which is in blue text in the Newbie's thread within the timeframe. And, if it is the truth, to add the sentence about the blue badge etc. as Redx suggests on page 3.
When appealing to the parking company it's only worth mentioning technical things - like the blue text appeal does. But when complaining to the manager or CEO you can 'tell it like it is': it was a stressful time, people in the car were shopping for others who needed help, this was an unfamiliar Iceland etc. And all that is enough to explain why the signs were missed.
It's okay to apologise to manager or CEO but don't overdo it. This is a difficult time - making sure that vulnerable people have food in their cupboards is a really high priority. If it was all very stressful, just say so. Politely but confidently request that they cancel the PCNs.

When you do go back to the store, be careful where you park OR pay for it, if that is their preferred method of annoying their customers!3
