175g SR Flour
1/2 tsp baking powder
pinch of salt
60g low fat spread
100g Caster Sugar
1 egg beaten
grated zest and juice of 1 lemon (I used lemon juice from a bottle as no lemons)
grated zest and juice of 1 lime (I didn't have any lime so just added a bit more lemon)
150g fat free natural yogurt
40g demerara sugar (I didn't bother with this)
Preheat Oven to 180 or 160 fan
Line a loaf tin
Sift flour, salt and baking powder together
In a bowl cream spread and sugar, beat in egg and 2/3 of lemon and lime zests. Add 1/2 yogurt and 1/2 flour and mix briefly, followed by remaining yogurt and flour and mix briefly again. The mixture will be stiff compared to a standard sponge mix.
Spoon into loaf tin and spread evenly.
Bake centre shelf for 35-40 mins. A skewer pushed into the centre should come out clear.
Mix rest of zests, lemon and lime juice and demerara sugar. Use a fork to make little holes all over cake, spoon the citrus drizzle on top and leave to soak in. Cool in tin and then Enjoy!
I suppose you could use any citrus

Gosh, its been cold here today, but no heating on so that feels like a small victory when everything else seems to be out of control - with the costs of shopping and product availability.

Have a great evening, must remember to text niece later as she goes back into hospital tomorrow for a C-section - although not sure when exactly, think this is also something praying on my mums mind (that she might won't get to meet her great-grandson), which in turn is making me worry more about mums mental well-being, she is terribly lonely and there is only so much to say every time she calls

@ziggy2407 thinking of you and your mum. I also agree that food seems to be getting more expensive. Even more noticeable as we can't shop at cheaper places too.Yesterday I dyed a dress of one of my smalls to give it a new lease of life. This morning I gave the washing machine a good clean as I'm a bit paranoid there will still be some dye in there ! Have followed the instructions but even so.... Put it on a drum clean wash just to be sure
other things:

reconcile just for points credit card
make cake for a friend and deliver it (observing distances) will be on our daily walk
meals from planner
some knitting for relaxation
water seedlings
check veg box delivery for later in the week
put washing away I washed and dried yesterday

Feeling for you and your Mum Ziggy. Best wishes to your niece, a new baby is such a lovely symbol of hope for the future.It is supposed to be warmer today, so hoping to get out in the garden for a while later, just odd little jobs to do, but something to look forward to.Other than that:Look at grocery budget which is all over the place. At least it is counteracted a bit by not buying any fuel for the car atm.Clean glass in front door as it looks decidedly murky in the sunlight this morning!Triage fridgeHoover round downstairsLunch will be 'bit sandwiches' as OH calls them - because they are made from 'bits' from the fridge and garden

It is definately challenging times, im finding that im not sleeping thru the night. Im wide awake in the middle.
Ive got more time but seem to be doing less.
Went shopping yesterday in what i thought was the elderly and vulnerable hour. But i had got my days wrong thinking it was Monday! Bonus was lots of very cheap easter egg chocolate which people def werent social distancing over. Got some for DD as she has to have extra calories to keep weight on. Also want to try and do and knock and run dropping some off at someone i know who is struggling as a small surprise. Difficult to run in a wheelchair but will give it my best shot!

-poorly cat keeps having flare ups so keeping a close eye on her.
- washing to put away and more to put on.
-have fixed a drawer and had a sort out
-need to give the cats a good clean.
-finally wrapped my first Christmas shoebox......im off!
-also noticed prices have gone up and flour difficult to get.
-slow cooker has been going none stop. Have really been making the most of cook once, eat twice plus there tends to be an extra portion for the freezer.
-i will do some diy touch ups today!

Hi everyone
@DawnW - it's a 900g tin and yes the baby is something we're all very much looking forward to even though it's all a bit bittersweet since DB is not here to meet his grandson. Niece is classed a geriatric mum (43) and she has had IVF to have this baby as she is single so she's classed as high risk so am glad they are keeping a watchful eye on her, we are also feeling very blessed that it all worked for her 1st time.
Rubbish day here as after dropping a bit of shopping to mum, I've been in bed so nothing much achieved except the very basics

Spoke with niece - they are going to try and induce her but if not C-section next week, so its all wait and see but she is in the best place

Morning Dawn and all who follow. The nurse at the hospital told me that despite being on the 12 week list and the advice was not to go out, a short walk when it was quiet was worth it for mental health reasons and just not to touch anything (gates, lampposts etc..) when out and wash hands thoroughly when back. Pros out weigh the cons (for most - but not all, but like you I’m choosing to be sensible and get some air).Ziggy I agree a baby is a lovely sign of new hope in these times. I assume you can deliver a photo of the baby to your mum with the groceries. I appreciate it’s not quite the same. We saw a new baby being introduced to family from afar on a walk last week. The family has to go upstairs and look out of the window as the baby was asleep in the pram 😊
Has a resurgence of energy yesterday afternoon so got a decent amount done in the end including stewing some gifted rhubarb and making almond and coriander pesto and cleaning out part of the fridge that’s empty.Today’s list:
edit food delivery for the weekend.Cast on new item will likely do this rather than my complex knitting today. Managed 1 row yesterday!!! Where’s the blue shocked head when you need it.Check banking
