Going to make a beef stew using some marinaded beef from the freezer plus veg I bought last week, some of which needs using up. That will be dinner for tomorrow night though as I always think stew tastes better when it's reheated.
Went to farm shop today to get a cabbage and celeriac and they had some really nice looking cauliflowers so I bought one so tonight's dinner will be a big cauliflower cheese with chips! It's a huge cauliflower so suspect I'll only need to use half of it as there are only 2 of us so the other half will get used later in the week.

Last night's dinner was a new recipe for us - giant couscous with roasted squash & toasted pepitas topped with some crumbled feta & a couple of soft-boiled eggs. It was tasty & filing and best of all there is another portion each of leftovers, to be had for lunch today!
Groceries arriving this evening - surprisingly little missing (cheese & evaporated milk) & only one substitution (sale meatballs) - though there were limits on eggs and the flavoured still water that OH is partial to. Guess we will have to do without toasties & pumpkin pie until the next shop in two weeks!4 YEARS 10 MONTHS DEBT FREE!!! We had a humungous cauliflower too @joedenise and had cauliflower cheese - he had hm sourdough bread and butter with his. I don't need the extra carbs. As it was his birthday we had ice cream afterwards - over crushed ginger biscuits and a squirt of ready-made chocolate sauce and a dribble of runny cream. - I highly recommend ginger biscuits over wafers (and that's why I didn't have bread too!)
I've got courgette soup in the oven, simmering and I think I will go for moussaka tonight - continuing the sloppy food thing and using up some of the cold lambSave £12k in 2025 #2 I am at £4863.32 out of £6000 after May (81.05%)

Unfortunately I don't like ginger biscuits @Suffolk_lass and in fact don't often eat biscuits at all (apart from when we're on holiday in France when I eat the caramel biscuits which come with your coffee!). If I have biscuits at home it has to be shortbread!

Bit of a sweep up supper - a cold sausage and a left-over hard boiled egg salad for me and DH pinched two sausages out of the package from the butcher and had them hot with salad. Simple and yummy. Have got a large chicken out of the freezer so will do a roast dinner tomorrow and then it will be LOs for a couple of days after that but not sure what they'll be yet!

Mushrooms, if you like them, are amazing. You can cook them then keep them in the fridge (in a container) for several days & they reheat quickly & easily.
So we buy them & cook them gently in a pan with the lid on but without adding anything, no fat or oil & definitely no water
then cool, store & reheat as needed. Haven’t tried freezing cooked mushrooms but suspect they’d be okay.

Cooked mushrooms are ok frozen but not great. I frequently freeze them in things (and as soup) but the texture does break down a little so not great with my weekend bacon sandwich sadly, fine to go on a sauce though.5

I don't get involved in mushroom discussions because I can't eat them.
We had HM courgette soup and then used up 7 eggs (3 dozen in the fridge!) on a sort of frittata - I fried diced onion and potato in veg oil in a shallow cast iron pot then poured the beaten egg, well seasoned (the chilli-flakes slipped!) and with grated strong cheddar, over the potato and onion mix and bunged it on the floor of the hot oven for 20 minutes with a bit more cheese on top. Had it with a really simple salad of iceberg lettuce, shop bought coleslaw and radishes - it was lovely! Had a bit of simple unadorned (sounds like Nigella!) greek-style yogurt afterwards (or the cheese gives me mouth ulcers!)Save £12k in 2025 #2 I am at £4863.32 out of £6000 after May (81.05%)

Plenty of left over roast chicken here so going to do some in gravy for tonight plus 2 x 2 portions for the freezer. The rest will be used for sweet and sour tomorrow night! Such a bargain from a reduced chicken which I think was £2 or thereabouts!
Do wish my DH would eat things like quiche and frittata but he just doesn't like the texture of them. He'll eat eggs most ways - fried, boiled, scrambled just not baked!
