Went freezer diving yesterday because we have half a lamb due on Saturday. Brought in a whole shoulder of lamb to defrost and cook this weekend (I have put aubergine on my list as I fancy a leftover lamb moussaka but if there are no aubergines I will use sliced potato and chopped courgettes instead). There was no minced beef in there so the chilli I hoped to make was vegi - a big vat of it. We had two portions last night and at least 3 or 5 left (5 if we have it with a JP!)
It all looked very well planned when our bubble friend asked if he could join us for the weekend (he is also in tier 1) - so he will come to the Village social club in our group of 6 and then we can have reheated chilli after that, I might suggest curry for Saturday and the roasted lamb on Sunday. We popped into the local co-op this morning on the way back from the garage (van MOT) and picked up bowl fruit and carrots using my £5 dividend cheque! I think the rest can wait until Monday quite happily!Save £12k in 2025 #2 I am at £4863.32 out of £6000 after May (81.05%)

Mmmmmm - love the thought of roast lamb SL!
We are still working on the remainder of our Sunday's pork roast - it was huge! Today for lunch, we had yaki-soba noodles & used up a nice wodge of the roast along with another of the purple carrots and assorted bits of veg. Tomorrow's lunch we will make steamed bao buns & slice the remaining roast to make bao sandwiches - not sure yet which veg we'll have.
Dinner last night was fakeaway chicken katsu with rice & we managed to make inroads into consuming the enormous pakchoi from the veg box. Opened a bottle of tonkatsu sauce that was in the storecupboard - really nice and fruity.
All meals this week are from the freezer & stores, but as always with fresh veg to accompany!4 YEARS 10 MONTHS DEBT FREE!!! Made up a Buddha bowl for lunch today using up bits and pieces from the fridge; just needed to cook some carbs so checked out the cupboards and decided on some quinoa which has been in there for a while.

Got some chicken thighs out of the freezer yesterday and have decided to use them to make Fakeaway KFC. Will also do some HM chips, baked beans, mini corn on the cobs from the freezer to have with them.
Also going to use some mixed frozen veg and a couple of veg stock cubes to make a veg soup for lunch.

We are out for a couple of hours early evening so it will be some of that huge vegi chilli and I will add some more chilli - the lentils just seem to suck up the spice! With our bubble buddy coming it's the perfect hot meal to come home to.

Everything from stores or freezer today. Fry up with sausages (sausages from freezer); burger & onions in buns (burgers and buns from freezer); roast lamb dinner (half lamb leg from freezer which was on offer at butchers) roasted peppers from £1.50 box fruit & veg box from Lidl; last of cabbage from fridge bought well over a week ago; potatoes from sack bought from farm shop beginning of last month; onions from 5Kg bag from Food Warehouse last month.
Tomorrow's dinner will be a shepherds pie made with the LO roast lamb; potatoes from sack and veg from freezer.

Lots of batch cooking going on yesterday with a shepherds pie or two and some curries for the freezer with some YS mince I picked up. I managed to get minced beef in my SM shop yesterday so the two packs are each divided into three smaller ones and in the freezer now. I also managed to get aubergines so I plan to make a moussaka but not today. We finally used up the vegi chilli I made last week, piled into a couple of baked potatoes with butter, cheese and a dollop of greek style yogurt (as a soured cream substitute) - it was lovely. Proper autumn sloppy food. (Apparently that's a compliment from DH!)Save £12k in 2025 #2 I am at £4863.32 out of £6000 after May (81.05%)
