Seems I lost track of the days & the traybake is scheduled for this evening...thank goodness the kitchen is built onto the side of the house & the two foot stone walls will keep the rest of the house cool!
Last night's dinner was a recipe we saw on Nadiya's show the other weekend, no cook beetroot sauce with pasta, feta & dill. A new for us recipe - delicious! - but it's a darn good thing I'm working from home by myself out in the garden today, as the garlic was soooooo powerfull that any and all vampires will stay in the next county! (Added bonus - no midge bites either). We've decided to cut the garlic in half the next time we make it.
Used up a package of cooked beets, another of feta, some garlic, and a red chili, all from the fridge; olive oil & pasta from the store cupboard. The recipe was a total revelation to me, as beetroot is certainly not on my list of top vegetables to consume, but I'm now a fan! Pink pasta would have all the little girls in my family enthralled - so pretty with the flecks of white feta & green dill! No more wasted beets when they send them in the veg box!
Had a browse round t'internet as well and found some variations with roasted beetroot, onions & garlic - I'm guessing this would mellow the potency a bit, though this defeats the object of a sauce made in the time it takes to boil pasta!

@rtandon27 - roast your beetroot when it arrives and then it's ready to use when you want it, but less messy than boiling it (if it's raw). Or keep some of the vac-packed stuff so you can have it as a store-cupboard meal.

Quick update - Son's Covid test was negative (just a cough!) - thanks for all the good wishes guys, it means a lot.Save £12k in 2025 #2 I am at £4863.32 out of £6000 after May (81.05%)

Our dinner adventure last night was brilliant & super easy! The recipe for the traybake called for gnocchi - which I discovered we were out of so substitute baby new potatoes cut in half. Broccoli florets, chicken thigh & thai green curry sauce from the fridge, some small red onions growning on the windowsill & as a substitute for peanuts, we used almond butter & almonds from the storecupboard. Mixed together in proportions from the recipe & bunged in the oven - dressed with fresh coriander and lime juice before serving - Such an easy and tasty recipe - another winner from Nadiya! At this rate, OH is trying to convince me to buy the cookbook, but I pointed out the recipes are all on the web! 😁
Greenbee thank you for the nudge to roast beets immediately - it's so obvious I'd not have thought about it - you must be laughing at my lack of foresight! The beets we used were the vacpac ones - but I'm going to have a looksee and see if we can scout out ones in glass jars instead. The traybake sounds lovely @rtandon27. I'd of substituted the gnocchi with potatoes anyway as can't stand the gnocchi! Think I need to check our Nadiya's website!
