Managed to get one of the £1.50 fruit and veg boxes from Lidl this morning so going to have make a few changes to my menu plan to use some of the stuff up!
Veg: 4 baking potatoes; 2 huge sweet potatoes; red cabbage; 2 Red Romain lettuces
Fruit: 2 lots of strawberries; box of green & black grapes; easy peelers; satsumas; 4 nectarines; box cherries
Looking like there will be baked sweet potatoes and baked potatoes over the next couple of weeks! Red cabbage will be braised with apples and then portioned and frozen; will also use some of it to make some coleslaw. Already have salad planned for lunches so will use the lettuces.
Fruit we'll mainly eat as it is but thinking I might do orange segments in a jelly for pud one evening; cherries may well become a clafoutis for another pud. Strawberries with yoghurt or quark as well as just eating them as is. Will also make a fruit salad.
First time I've managed to get one of these boxes but I went shopping earlier than usual today so must do that again next time!

Thank you. We got to Lidl about 9 o'clock and there were 2 boxes on the packing shelf. The other one seemed to be all fruit, couldn't see any veg in it at all. To be honest I'd rather of had one with more veg and less fruit but I'm sure it'll all get eaten. There was only one satsuma which was a bit manky so that went into the food waste bin, decided it wasn't worth peeling it and eating the bit which was OK with the number of oranges there were!

I didn't manage to get out this morning so operation buy a Lidl wonky vegetable box will be postponed until next week.
We only have bananas, cherry tomatoes and 1 carrot fresh, think I'll make us all a smoothie using frozen fruit this afternoon.Fashion on a ration 2025 0/66 coupons spent

Last night's dinner was cauli-cheese made from the veg box & frozen sliced pork roast from the freezer. Yum! (1/2 forward & 1/2 reverse meal)
There are two more portions of the cauli left that should do us for a very late lunch 😊

We are back from a long weekend away camping where barbecued meat, salad and potatoes was the order of the day - plus a cheeky fish and chip supper for DH on Friday (I had the burger - I don't know why, I am always disappointed by a burger from a f&c shop!). We were with four friends from 3 households but all outside, using our own camping facilities, catering for ourselves, we only actually shared a few potatoes with our bubble friend who sometimes stays over. A really nice time for all of us as we have all been in isolation since mid March.
We returned to so much veg - 3 packs of chopped courgettes have been frozen and one lot of soup made today, and more coming tomorrow. I shall need to freeze dwarf French beans and we shall be eating runners (they don't freeze as well in our view) with grilled meat tonight or tomorrow. DS was house and cat sitting and he got minced beef out and did not use it - might stuff a couple of capsicum peppers and add some of the tomatoes. And chillies. OMG they are so much hotter than shop bought. Only Apache and cayenne but soohot! They are in the freezer but lots more coming!
Lots of lettuces running to seed but I don't have any cucumber to make my preferred soup. I might use pea pods instead.
We had cauliflower cheese last night as it was nearly 9pm before we noticed we hadn't eaten - and cooked the spicy-rub ribs that were reduced last Wednesday in Morries - they were fine and passed the "sniff and peer" test - we have had them for lunch today, with chopped up apple.
I am going to try the 8-week blood-sugar diet again as my body has begun to forget, and the indulgence of lockdown is not something I want to carry into the autumn! I have started today.Save £12k in 2025 #2 I am at £4863.32 out of £6000 after May (81.05%)

Hi,
I've spent all my grocery budget for this month so I need to be on it with the reverse meal planning for the next 8 days. I have a huge bunch if asparagus and no one else likes it so i need to work that out, might make pasta or risotto with it.
I have plenty to make a few of my favourite dishes but lunch for hubby will be a pain - he's low FODMAP and veggie.

Made a quick ragu sauce (oxymoron!) last night with the mince that Son got out but did not use. Added an onion from stores and tinned tomatoes, garlic, herbs, wine, seasoning and chilli. Had half with tagliatelle last ight and I have prepped stuffed peppers with grated cheese on top for wither tonight or tomorrow night. We must eat runner beans, and freeze dwarf beans. SL - any tips for runner beans? - I've never cooked them (allergy) but OH says he loves them and some arrived in our veg box! Freezing tips would be great too!4 YEARS 10 MONTHS DEBT FREE!!! Personally I'd get OH to cook them himself @rtandon27 - otherwise, top & tail, remove strings, cut on a diagonal and steam.7
