    Last night was beef stir fry for us, with noodles, and the seasoning just sesame oil, dark & light soy and a splash of rice wine vinegar - very simple but really tasty. I threw in some chopped cashews for a bit of crunch as well. that christened both my new wok and my new knife (£4 in HomeSense for a Sabatier All Purpose knife - bargain!)

    I'm going to go with a rice bowl for tonight I think - I've got chickpeas out to go with, and I might do a quick coleslaw to use up a last chunk of red cabbage (Christmas 5p veg) and a sad carrot along with a pink onion. The main protein component will be halloumi, and I'll throw in some chunked up sweet pepper too as I've got some needing used. As usual I'll do mine with brown rice and leave MrEH to sort white for his when he gets in from rugby training.

    Meal planning for the month is complete to just pat the halfway point - I will try and fill in some more gaps this evening I think.

    Definite gaps in the meat drawer of the indoor freezer and an empty drawer in the small FF in the toolshed. I am going for more use-it-ups this month too. I want to get some (posh) fish fingers into a smaller box so I plan to decant some today - and the same with the salmon wellingtons - both are in large boxes in the chest freezer in the garage. We still have a small amount of cold lamb (which Mr Sl can have in a sandwich - I am planning soup for me and then chipolatas for supper - probably with a baked potato.

    I shall be shopping later and I am looking forward to the replenishment of salad and other fruit and veg.

    There's going to be plenty of reverse meal planning when we come back from holiday! I've done a quick inventory and there is enough in there for the making of 26 meals for 2 people including some HM ready meals plus joints which will do at least 2 days meals if not 3 (if I get 3 days worth then there will be more than 26 meals) and that doesn't include the meals I can make with tins and dried foods in the cupboards.

    Coleslaw did indeed get made last night - the last wedge of red cabbage, the smallest pink onion and the single sad carrot - with the mayo being a mix of the posh smoked chilli one and the cheap Lil's offering. Very tasty, and there's a portion each left which I will probably throw on as a side with tonight's risotto. That in turn will use up a bit more of the christmas turkey, and the last of the mushrooms.

    I'm planning mince and tatties for tomorrow and will need to dig in the freezer for veggies to go with.

    I'm out on friday daytime, and the mealplan currently has "Takeaway" pencilled in for the evening, but I might yet amend that…

    I have just got the shepherd's pie out of the freezer so we can have an easy supper when we get back from collecting the new (to us) truck. It will be a relief to have two vehicles again, as Mr Sl hates driving my car almost as much as I hate him driving it!

    I hope the truck is meeting all that you need of it SL!

    Yesterday ended up with a fully reverse planned lunch - the meal plan confidently suggested a "fake christmas dinner" roast lunch, but for various reasons I had done that the previous week instead, and forgotten to re-plan. electric prices were also high so I didn't really want to use the oven for any length of time. With some thought given to what we had in, I opted for a coconut broth flavoured with a "oxo" brand stock-pot type jelly in an Asian inspired style, assorted veg, some turkey chunks from the freezer, a couple of dollops of peanut butter and some noodles. It was really delicious and very much made use of things that we had available to us!

    Back to the meal plan this evening for lamb meatball pasta which will contain copious amounts of mushrooms, the remains of a yellow pepper I started yesterday, and very possibly some freezer veg too. I'll use a tun of chopped toms for the sauce I think, and add a squirt of spicy sauce to wake it up a bit!

    Tomorrow is planned to be rice bowls - with some veggie pakora I got Y/S'd a few weeks ago. We may end up with eggs with that too as I have the final three in the box that need using. (That said, if their date is long enough I may also sub in sausage, egg & beans for later in the week - we'll see!)

    Yesterday we managed to clear some space in the freezer by having 'hot-dogs' - some posh sausages I bought ages ago and the accompanying buns got pulled out of the meat drawer which revealed all kinds of treasures!

    It appears that we have lamb steaks, pork steaks salmon, several different cuts of chicken, several 250g blocks of assorted mince, some Chinese fish balls, Japanese octupus balls and 15 portions of lardons!

    Remind me to never freeze bread again - this is the 3rd time it has hidden real ingredients which will save me more than the price of the buns! There were a good few months when OH had zero appetite and everything ended up shoved in the freezer rather than waste it!

    Dinner last night was a roast of sorts - roasted brussels, oven baked panko crusted steaks, steamed carrots & potatoes. The root veg really needed using up freed up some room in the fridge!

    Tonight we eat whatever leftovers are in the fridge as tomorrow we have groceries arriving tomorrow, most of which is fresh rather than frozen!
