I have a jar of coffee curd that is 2 months past the best before date, so I have to make something with it (I did just give it a sneaky try, and though it’s a bit crystallised it tastes fine).

I am thinking perhaps fork biscuits sandwiched together with the curd.
    Any other suggestions?
Wonder if you have any gelatine you could dissolve in hot milk and turn it into a coffee creme dessert?  You could stir in any dregs from a leftover Christmas cream carton.

No, but I do have a lot of chia seeds that also should be used up. I have a chia choc pud recipe that could probably be adapted with the coffee curd!
    Thanks for getting me thinking!

edit - in fact, def going to do this as will save having to use the oven.

Nearly past it spring greens were used tonight. Whoever added the lemony recipe for them thank you. They were actually delicious and I’ll probably only ever have them like that in future.

A olio grab, free from quiche Lorraine, olio cooked chicken pieces and the spring greens which needed using was dinner tonight and so reverse meal planning. Bakes some cheese and spinach muffins for the children too as the oven was on.

A portion of Indian cabbage has been gifted, my husband ‘couldn’t bare’ to take it to work again; he was ridiculed for having it yesterday apparently 😂

That greens recipe is amazing isn’t it! I’ve cooked it several times since it was mentioned here, so thanks to the person who posted it from me, too!

Turkey curry was lovely, and there was enough in the packet of jasmine rice for more than one meal for the pair of us so I cooked the lot and will freeze the balance for use in a stir fried rice meal one night I think.

  • The lemony greens recipe was from me - pleased it has gone down so well as it’s a firm favourite here.

Tonight we had a meal that - gasp - had NO leftovers in it! Tomorrow however will be a different matter, have a jacket potato, small sweet potato curry pasty and half an avocado which will be finished off with salad between DH and I for lunch.

Just revisited the original post, I need to make a note of it.
Leftovers:- we seem to move from one meal of leftovers to another one - so well done happydenial, are the flags flying?

Tonight:- 1 portion of LO pheasant casserole, bulked out with some LO chicken pieces, mushrooms, sweet potato and veg from the fridge plus a couple of dumplings which used up the bit of atora left in the packet.
Tomorrow, I need inspiration for the contents of the fruit bowl before they go too far over the top.

We still have lots of Christmas treats to work our way through - definitely makes me realise we don't need to buy quite so much next year as we've been gifted lots.  Have taken the tip from here and put all the chocolates and biscuits in the cupboard under the stairs as a treat when we need a sweet hit but they're out of sight enough so that we won't be too tempted.

Have a tiny chunk of gammon that I've earmarked for breakfast tomorrow with some poached eggs (bit like an eggs benedict) and then So. Much. Cheese.  We bought some for our own cheeseboard which we're almost through with but then the in-laws sent us a huge cheese selection to go with the new cheese board they bought us.  Going to crack both open tomorrow along with the port we bought back from Portugal as a lazy dinner, but then have no idea on the rest.  Might end up with a few decadent mac and cheese portions in the freezer just to do something with it all!

Last of our carrot and coriander soup for lunch today and dinner is potato wedges with a portion of veggie chilli from the freezer.  Also need to do a proper inventory of what we have and what I need to work through in the cupboards this weekend, along with the other 1000 and 1 things on the to-do list!

  • Can somebody post the lemony greens recipe so I don't have to trawl through to find it - thanks

I had half a red cabbage from Christmas left and a punnet of cranberries from olio, half an uneaten  apple from one of the children so chucked it all in the SC today. I’ve planned to have some next week with gammon steaks and inevitably some with sausages and mash.

I ended up with 4 bags of 6 kiwis last week from olio so finally got around to peeling al of those and blended them with some bananas and spinach for a smoothie for the weekend.

Finally, dinner was chicken fried rice with some of the cooked chicken I made yesterday. I’ll probably go back for another potion later as it was pretty delicious.

Surprising what’s possible when my son takes a 90 minute nap!
