Had some mince in the fridge which needed using but wasn't enough to make something like chilli or shepherds pie so made a couple of burgers which we had for lunch with some onions in rolls - very tasty they were too.

In a conscious effort to use up what we have in the freezer, today we had Salmon, Rice and green veg. The Salmon was a whole fillet that was yellow stickered that I’d frozen and I’d already used half, so we the rest of that. Jasmine rice from stores and frozen peas and green beans. Do any of you find your frozen salmon tastes " muddy" these days?I remember many years ago when my OH used to visit Ireland on business he used to bring home wild salmon which tasted much nicer. These days I think most commercial salmon is farmed in huge tanks and fed on pellets and aI suspect this is what contributes to the different flavour.
is there any way of cooking it which can dispense the flavour ? Perhaps my taste buds are over sensitive ?1 -
@Primrose how are you cooking your salmon? If it's really gentle cooking like steaming or poaching, that may not be helping. Pan frying in some nice butter + olive oil is delicious along with roasting. I tend to also season my salmon really well, not just salt and pepper like most British recipes call for. So a mix of salt and freshly cracked pepper, garlic powder, chili powder, fresh or dried thyme, cayenne pepper, paprika, etc. Definitely try different spice mixes and liberal amounts of cooking fats. I find they enhance the natural fatty nature of salmon, but then again, I love and am not afraid of fatty fish or meat. Love it.

DH is still away until tomorrow, so am endeavouring to eat from the freezer and use up what’s in the fridge. Eldest kid is out for a birthday lunch, so youngest will have beans on toast with the half tin in the fridge. I’m going to have a tuna sandwich to use up the end of the bread - the rest of the tuna will be eaten by the cat to hide her flea tablet in (she’s a dear old, scratchy thing who hates flea drops).Have got a tub of leftover chorizo & mushroom pasta out of the freezer for the kids later, will airfry the last half baguette to go with it. I’m going to have something spicy with cauliflower as it needs eating (I’m ignoring the lentil cottage pie for today - lalalala, I can’t hear you).Books read 2023 - 49/751
