Jambalaya last night was delicious if not a little spicy! Not much left as we all went back for seconds.

Tofu scramble with crumpets for breakfast, using veg from the fridge. Chicken and chips tonight, breaded with oats as we’ve no bread or shop bought crumbs. Anyone use anything else to breadcrumb?

How about a packet of sage & onion stuffing mix?  You could throw in a few oats too.

As I bake my chicken I use instant potato powder mixed with various herbs and/or spices and then egg and dip in the mix before baking in the oven.
What a good idea - Thanks
Does anyone know how to make those crispy potato slices that are in the supermarkets? We love them and try as I can I've never been able emulate them.

Extra small chicken tonight, the reviews say 'just enough for two' but I usually manage to get soup out of it as well. Plus veg tray bake, I've a few wonky carrots and a couple of parsnips that need using up.

And of course semolina is something you could coat your chicken in to get a crunchy crust instead of breadcrumbs, along with oat bran or fine oats @MissRikkiC.

Having made disastrous soup which included too much leek cellulose stalk (like small bits of plastic in every mouthful) I have sieved it and made fresh, with which I will mix it. Stand by your beds for soup for every lunch this week!

Thanks all. We used oats in the end on account of not having the other bits in at all but it was delicious anyway.

Friday lunch I cleared the fridge of left over hummus and a yogurt cheese dip with some cheese and salad bits.

Saturday was breaded chicken and chilli chips for me and hub. He had 4 wings and 1 leg that I don’t eat.

Mushrooms scrambled egg and beans in toast Sunday for breakfast, freezer chilli and packet rice for lunch and we were treated to a take away last night for dinner!

I also made a few soup batches @Suffolk_lass, leek and potato, mushroom and curried parsnip! All the garden spring onions are used which I’m pleased about and on to week 2 of the reverse planning meal plan!

Got a goat curry out of the freezer for dinner tonight.

Was going to make a butternut squash and chickpea curry for later in the week but that's going to have to wait until tomorrow as I've run out of onions!  Certainly can't make a curry without them!

Have got out a couple of pork steaks to have for dinner tomorrow night.  Will probably have with mash & veg but may just do them in another traybake!

  • Morning all!

Veg box turned up three unexpected Globe Artichokes so I'll be looking for ideas for those for one day later in the week.

I nearly had the veg drawer in the fridge down to nothing before the box arrived too which was  a rare event - just the last few of the previous box's beetroot and sprouts and a couple of lemons. well stocked again now though!

We have the second haggis from the fridge planned for tonight - I'll do mash with it as we've got lots of tatties still (and got 4 more jacket sized ones in the box too - two of those got eaten at lunchtime yesterday) and some form of veg - probably some of the sprouts I suspect.

Yesterday's dinner involved a good freezer raid - a box of the roast pork from the other week with a tub of its juices, and the tub of red cabbage and apple that my Mum gave us from the batch she made for Christmas lunch. This week's meal plan consists of a fair few bits from the freezer ahead of the farmers market next weekend - I need to start making a list for that!

Ohhh I’ll be watching for the artichokes recipes. I have seen a few people in various places asking for recipes for these and seen them referred to a lot as ‘fartichokes’ 😂😳 made me laugh!

Does everyone roast beetroot? I have a few I’ve picked up from olio this weekend but was planning to pickle it to both preserve it and because that’s the only way I know I enjoy them!
