  • Raiding the freezer for the last of my lentil soup batch as lunch today.  Dinner is spaghetti bolognese as something simple that we haven't had for a while.  Will bulk it out with some peppers and grated carrot so I only have to use half the mince - the rest can go in the freezer for another meal next week.

    In case anyone has a large bargain jar of olives that seemed like a good idea at the time - I can vouch for them being a little softer but perfectly edible after freezing (green pitted in brine) - 2 more pots to go.

    Good idea, I always end up throwing mine away. Do you drain them before freezing?

    I'm a bit low on potatoes and want to get to the weekend before going shopping. Tonight will be a flan (or call it what you will) egg, bacon, mushrooms, leek, - veg for him, lettuce for me. Pudding - LO chocolate cake from Monday with custard.

    @Suffolk_lass - we also bought a large jar & froze them - yes it did seem a good idea at the time - though they are not pitted - we take out a few at a time and chop to put on top of pizza...

    ..it may be some time before we make our way through them!

  • Morning all! Interesting on the Olives - I usually just buy the smaller jar from T's as it's only me that eats them and I have to put up with "food of the devil" comments from MrEH! As such though I get through them in a timescale longer than the jar suggests should be a problem, but before they actually start growing fur, which is my personal cut-off. 

    Another batch of pork out of the freezer for stir fry tonight - veg aspect will be cabbage, onion, mushrooms and probably some of the brussels sprouts. Ready-to-wok noodles (SUCH a godsend!) and sauce made by mixing dark soy and gooseberry ketchup again. we've decided that a LOT of this years fruit will go to make ketchup as it really is delicious!

    Tuna sandwich for lunch here today, using up an older tomato which wasn’t very nice. Really put me off the entire sandwich actually! Biscuits for dessert bought by the kitchen fitter (a very good friend) although they were practically inhaled. 

    Tofoo and beetroot burgers tonight …. Fingers crossed they work!

    Was going to be butternut squash and chickpea curry for dinner tonight but we got a Too Good To Go bag yesterday and there's a couple of wrinkly aubergines in it so a moussaka/cross hotpot sort of thing tonight (ie topped with sliced potatoes but without the béchamel sauce!

    So we'll have the curry tomorrow night.  2 x 2 portions have also gone into the freezer.

    I cooked a batch of mixed dried beans (10 different beans) this morning which will end up in a chilli to which various veg will be added from the fridge, including peppers (again from the TGTG bag); carrots, mushrooms.  Will cook that tomorrow in the slow cooker and after taking a couple of portions out of it the rest will be portioned up and frozen.

    I've also got loads of avocados to use up so recipes other than dips and guacamole would be gratefully received!

    I drained and decanted into small plastic clip top pots (some of which might be missing a clip or two) and just froze them like that. I was horrified when I realised the whole jar of black ones had to go and it was about a kilo so I thought, here goes nothing!, with the green ones.

    I know a small jar would have been sensible but I was in the cash and carry!

    Trout steak with runner beans, tenderstem broccoli and cauliflower for dinner tonight.

    Tomorrow I may do miso aubergine with tofu for me, not sure about OH.  Really need to clear out the fridge and see what we have in to meal plan.
  • joedenise - The stores here sell frozen avocado. I do freeze some also, but take the insides out and put in plastic bags and then freeze. I like them in place of butter on toast or in my ham sandwiches.
