I'm looking at my fruit supply and thinking will it last until next weekend ? I have three bananas, two large oranges and 6 gala apples, hmm yes I will make it streetch a bit.. The apples I can peel, slice and poach in a little honey so they will do over the weekend at least. That leaves 5 pieces of fruit. but I do have some tinned stuff if I run short. The banana I can use one sliced up to make a banana custard for tomorrow  the oranges I will save until early next week. I am trying to eke stuff out as long as possible so I only food shop twice a month. Worked OK in January and this month is a bit shorter so fingers crossed it will be the same .
I have enough veg,so I'm not too bothered. I will be  delving down into my freezer and I have a feeling there is some diced pineapple in there somewhere which will come in handy.

Just had some leek and potato soup to warm me up before I go out, it was delicious and I have enough left for tomorrow as well. My next soup will be spicy celery, as I have a good celery head in the veg box which will make me a good couple of litres. I found some really nice ground chilli powder in the back of my cupboard last sunday and it pepped up the soup beautifully.

Lunch was bought in for me today so doesn’t count but dinner was turkey carbonara which was delicious despite not having any bacon in on account I forgot to get it out. It would have been ham instead of bacon as that is what we have in! But that’s be good for tomorrow instead!

@joedenise I’m not sure how links work here so will try it but if not it’s a Jamie Oliver recipe with fennel chorizo/sausage/salami and tomatoes with pasta.

@EssexHebridean managed to eat a light meal at 5.00 and didn't run until 6.30 so worked okay today but will probably try and have something earlier next week.  I normally exercise first thing in the morning so there's no issues with eating first!

@joedenisefirst time I got fennel in my veg box I googled and found a lovely coleslaw recipe.  It has disappeared now but it was fennel bulb, carrot, shallot, white cabbage and the dressing is 1/4 cup each of mayo, white wine vinegar and olive oil, tablespoon of horseradish and teaspoon of italian herbs / seasoning.  I've veganised it in the past with vegan mayo and horseradish and that works well too.

@CCW007 that sounds lovely.  May well use that coleslaw recipe, it's something I often make.  The addition of fennel would work really well I would think because it's such a nice flavour.

DH did supper last night, using both the leeks to make cheesy leeks. A little too much cheese sauce but very tasty. I wasn't going to confuse him with a French recipe.

I have a frozen Oxtail out and defrosting to make some sort of stew today

  • Loving the thought of fennel in coleslaw!

Raided the freezer last night for the last of the roasted beetroot from the previous lot of beets, a tub of roasted tomatoes and some lamb & rosemary sausages - those will get cooked tonight as a traybake with the final leek, the remainder of the punnet of mushrooms, and a pack of gnocchi. Really looking forward to trying baked gnocchi!

I did laugh at the comments about J@mie 0liver on that blog post - I can't disagree with a lot of it, not least who the heck made him a nutritional expert for goodness sake - last time I looked he'd qualified as a chef not a dietician! I can't disagree with him coming up with some fab recipes either though! Just made me giggle (and be grateful that my copy of the book is shut away in a cupboard!)

It also works well as a salad when finely sliced and mixed with chopped parsley and just a light dressing rather than mayo

I also use it in risotto softened with the onion at the beginning especially if a seafood / fish risotto

I've made some coleslaw using some of the fennel; I've got a small dish which I've put the mayo on for our lunch today and the big bowl is in the fridge covered with cling film to use again later.

Using up a couple of the peppers which I got in the TGTG bags and stuffed with herby couscous.  Also used up some of the salad stuff.  Just a little bit of lettuce, half a cucumber and a few cherry tomatoes left.

Thanks everyone for the ideas for using the fennel.  Think I may well the rest of the bulb in a traybake tomorrow night!
