    Morning all and happy new year.  Still working our way through "Christmas" leftovers - didn't cook our gammon joint till this weekend so that's featuring heavily in meals this week.  Tonight I'm having stir fry and rice using up some veg from the bottom of the fridge, DH is also back on his 5:2 thing so will have beans on toast probably 😆

    Was supposed to be making chicken Kievs for dinner tomorrow but as it was raining so hard didn't fancy going to the outside freezer so have got some pork steaks out of the inside freezer to have for dinner tomorrow!

    Today I'm making a chana saag with spicy rice using the chickpeas I cooked yesterday.

    @ruby_eskimo - I just love a bottom of the fridge stir-fry!  I 'discovered' recently that we have a tin of bamboo shoots, another of sliced water chestnuts & a third of bamboo shoots.  Must remember to incorporate these over the next few stir-frys we have.

    Dinner last night was broconut noodle - last of the egg noodles used up & none in stock atm for our online shop.  Not sure why, but the broccoli was super crispy even after extra time cooking, so we both ended up zapping our bowls for another minute in the microwave to soften up the veg.

    Dinner tonight will be leftover pot roast chicken & from Sunday, along with some rice & green beans - another use it up meal that means minimal cooking and cleaning up.

    Lunches for the week will be based on the clearance gammon we boiled up this morning & homemade vegetable soup.  The gammon was quite small - only 750g before cooking, but price per kilo means less than the cost of the cheapest pre-sliced ham that we usually buy.

    We offloaded three pots of leftovers to DS today. half an ice-cream container of chilli, one of beef curry, half of veg curry to mix through it (as the beef is too rich on its own). Marvellous.

    We are having jacket potatoes with salad. Perfect simple food. Reducing the stock of perishable starchy carbs that must go before next week (bread in freezer will come out tomorrow)

    Morning all.  Found some random diced pork in the freezer so going to use that up with a courgette and onion and the last of the black bean paste that's been hanging around in the fridge for a while for dinner, along with the last of the noodles in the cupboard.

    Probably sensible for everybody to use up their frozen pork fairly quickly.

    As we,ve discussed on this thread preciously for some reason pork just doesn,t seem to freeze as well as other uncooked meats and both the taste and texture after cooking can be very disappointing.  We now to try and use up frozen pork within a month maximum.  Pork sausages seem to be the only exception.

    Please can I play? I like to always reverse meal plan (partly because I get veg/fruit boxes delivered), although that scares DH who just makes the same few things again and again 😂.

    Today I have too many eggs, sprouts, onions, leeks and a bag of frozen fruit that’s been around for ages and I’m sick of seeing it.

    So lunch was spiced roasted sprouts, onions and baked eggs with toast. Dinner was leek, pea and cheese orzotto. Pudding is chocolate brownies and ice cream from the freezer.

    The frozen fruit is currently on the hob being turned into compote for my morning porridge and I’ll put some into little glasses with some yogurt for easy puddings.

    Spag Bol has been rescued from the freezer and is defrosting for tomorrows dinner.

    Still got a whole freezer full of food, but I work out what to make based on the fresh food that needs using first.

    Chicken thighs out of the freezer for dinner tomorrow - Fakeaway KFC with home made chips, corn on the cob and beans.  One of my favourite evening meals!

    @joedenise - did you have a peak at my meal plan? - we had fakeaway chicken & chips with a side of steamed carrots for dinner tonight!

    Our dinner's this week are all from the plan, but not necessarily in the order we set out, as we've found ourselves in a bit of a time crunch several days in a row, with our planned diy & tidying taking much longer than anticipated!  OH has said he will start one of the more complicated dinners first thing tomorrow to get it prepped for us early.  Lunch tomorrow will be all the random bits we have lurking in the fridge with a side of soup to fill it out.
