The salmon curry the other day wasn't a success and won't be making that again!  It was just far too tomatoey - salmon and tomato don't really go together we've decided!

I'm sure I'll need to scrape off quite a lot of fat once it's cooled down properly!

We use this sort of fat mixed with dry oats for bird food in winter.  In cold weather they snap it up quickly.

I have now made soup with the stock I made yesterday and added all the leftover veg except red cabbage, which my cousin makes (always too much, she sent over double what I requested and I have frozen the half we didn't eat!!). I have frozen slices of ham and turkey and kept a small amount out to eat now. Lots of prep to do for NYE next but need to get a wiggle on and get ready to dog-walk at 11.30

We ended up changing our plans at the last minute due to me testing positive so hoping to visit family for the new year instead.........
Isn,t it amazing what the difference a year and the vaccine had made to our lives, which we shouldn,t take for granted?
A year ago a positive Covid test result represented a genuine potential death risk. Now we,re nearly all jabbed  it has just become mostly "an inconvenience.".

Last night's dinner was a stir-fry made with some of the leftover chicken from xmas dinner.  Lots of fresh & frozen veggies thrown in as well & pre-cooked rice used up from the freezer.  A bit more room in both the fridge & freezer is always a good thing.

Today we plan to do a pot of braised red cabbage and also a potato & egg frittata to use up more of the Christmas veg box.  Still not sure what to do with the glut of parsnips - perhaps more of the parsnip & ginger soup we made previously?

Plans for today involve prepping and freezing all sprouts and dehydrating and canning potatoes.  Planning to make potato and green bean curry for the freezer.

Should be good for veg for a little while! I've got two red cabbages to braise and freeze but they will keep to the weekend as I'm back to work tomorrow for three days.

Eek, picked up 25 packs of little gem lettuce on Olio yesterday,  Despite my best efforts to rehome them I still have 10 packs left.  Any suggestions?

Lunch yesterday and today was leek and potato soup (with rolls from Olio yesterday and salad today!!) Dinner tonight was freezer surprise - the surprise is I'm still not sure what it was! Definitely aubergine and tomato - maybe veg chilli, tomato and aubergine stew or ratatoutille.  Was very nice though - served with home made chips.

I make lettuce a la Francais which is braised lettuce, spring onions and peas.  It's a lovely side veg but definitely wouldn't want to do it with 10 little gem lettuces!  A couple at the most.

That stir fry lettuce recipe looks good, thank you!  I've got several pots of salad soup in the freezer but I can always make more - I have soup and salad for lunch most days so it won't go to waste.

It's worse than 10 lettuces - there are two in a pack!  That sounds lovely, I'm out of spring onions but I have some banana shallots - would they do as a sub do you think?  Ah just found a recipe using shallots so it seems like it would be fine.  Shame it doesn't sound like it would freeze well.

Shallots will definitely work well.  Red onion works too.  Definitely a shame you can't freeze it.

You can make soup with lettuce although I haven't tried it but it can be frozen so might be worth a try?  Loads of recipes via Google!
