    Today for lunch I used up some dried cous cous, packet falafel mix, leftover salad from yesterday and a couple of wraps that were lurking in the freezer. Also used a jar of roasted red pepper and some walnuts to make a sauce/dip. Our cupboards are under control, as is the fridge (though some bendy celery has been whispering 'use me' for a few days) but I think I need to tackle our freezer over the next few weeks. Baby is due in 10 weeks or so, so I need to start hatching a plan for batch cooking!
    @MandM90 I acquired a roll of "tennis court" fencing and DH nailed it to panels made with roof battens to sit round the raised beds. Previous version with chicken wire (bit lethal on the hands and clothes) in the second pic. Excuse the weeds... it's the time of year!!

  • Last day last day for a while for me to cook a main meal as we’re off to Cornwall tomorrow and will grab food on the drive. The planned stir fry for us tonight - did have to pop to Al’s for some pork to do with the veg but that will get split so half goes into the freezer. Also planning to batch prep some veg for the freezer - runner beans, courgette, and some of the veg box cabbage. The stir fry will see off some of each of those though plus some of the remaining, slightly sad kale. Hopefully I can minimise what has to go to compost though.

    We had a grocery delivery yesterday so are nicely stocked up for the week!

    Last night, OH made a chicken & veg stir-fry with noodles - enough left over for a meal during the week, which makes for an easy dinner one night!  Breakfast today was an apple cinnamon swirl, lunch duck filled bao buns and afternoon snack raisin scones, all from the last minute deals when I amended my order on Tuesday evening!  Nice easy day to end off my last week of pandemic wfh arrangements.  Monday is back to daily commute into the city, so our meals will have to be simple & quick during the week.

    Back from our week away and we did quite well with emptying the fridge and freezer before we went - it's all full up again now though!  Had sausages with mustardy lentils yesterday with mash potato - lentils were from the cupboard and the mash was the last of the current batch of home grown potatoes.  Made 4 portions so one of the spares went into the freezer and the other spare will be my lunch one day this week.  Also made a big batch of lentil and coconut soup for lunches this week, again using things we had in the cupboard and freezer so fridge is well stocked for me.

    Dinner tonight is good old carbonara with some mushrooms leftover from our trip.

    Finally managed to inventory chest freezer and move items over to new upright freezer so plenty of space now!  Just inside freezer to inventory.  Got so much frozen fruit and veg it's unbelievable!

    Breakfast was bagels out the freezer, lunch will be Olio sandwich and rest of lentil soup made at the weekend and dinner will be mozzarella (out of the freezer) pasta with loads of veg.

    Also picked up 10 heads of celery at the weekend, processed about half for soup base (with carrot and onion) and sliced frozen celery so need to finish that job tonight.
