    We eat out with friends yesterday at the local pub (have not seen her since Feb 20, even longer for him (eek, blue screechy thing)) - I wasn't expecting them to spend the afternoon so I was still doing bits at midnight in preparation for an event I am involved in - and up and more at 06.30...
    Save £12k in 2025 #2 I am at £4863.32 out of £6000 after May (81.05%)
    OS Grocery Challenge in 2025 I am at £1286.68/£3000 or 42.89% of my annual spend so far
    I also Reverse Meal Plan on that thread and grow much of our own premium price fruit and veg, joining in on the Grow your own thread

    Keeping it simple these days & definitely reverse planning has been our mainstay for the past two weeks!

    Yesterday's BF was toasted bagels with butter, jam & cheese (bagels from the freezer) - lunch in transit was a pitstop at Gr3ggs for steak slices - dinner an easy one of pan-fried chicken burgers on toasted brioche topped with melted jalapeno cheese, sliced onions & cucumber. 

    The oven at our new place is sadly out of commission until we get the cleaning company in to make it sparkly, so I foresee lots of stir-fries over the next week or so!  (Fingers crossed our new fridge arrives today...we've been using the picnic cooler in the interim!)

  • Hi all, we've been using various bits from the freezer over the last few days. I've done some cooking today and hard-boiled some eggs ( a few were eaten at lunchtime, the rest for the fridge), also made a frittata with the sad-looking butternut squash, some green peppers past their best, a red onion, a block of feta and some more eggs(I had too many given to me). I've got some extremely brown banana's that need to be turned into banana bread so will do that tomorrow. 
    Need to meal plan for the upcoming week

    I'm soaking some chickpeas tonight which I'l cook in the morning to make chana masala for dinner.  Will make some falafel with some of the soaked chickpeas before cooking the rest.

    Some will also be frozen in usable quantities once cooked.

    Yeah - we now have a fridge! - not my first or even second choice of appliance, but never-the-less it will do!  Who thought that getting a fridge delivered would be such a saga! 

    Now that we are up and running kitchen-wise, I've done a meal plan for the week!!!  Sooooooo happy to be a bit more organized, all meals based on what we've got in the freezer, fridge & (mostly unpacked) stores.

    Brunch was home-made flatbreads from self-raising flour, yogurt & olive oil with a few chipolatas, a couple of fried eggs and some well cooked onions.

    Dinner tonight was a mince & bean stir fry with steamed carrots & white rice.  Lots of left overs for another time, so we are already building up our 'ready made' meals in the freezer. 

    After two weeks of too many take-aways, it feels great to eat good home cooking & get back into a rhythm.

  • Happy new fridge day RT! 

    We’ve been away over the weekend, so now trying to get my head around meals for the week on, once again, minimal shopping. (£6.27 so far, although there will be an Aldi shop in the next few days). 

    Tomorrow, I’m thinking baked sweet potatoes topped with savoury mince, and some veg of some description, most likely runner beans. Simple, quick and hopefully tasty.

    Ooh RT, those flatbreads sound like the ones DH makes instead of naan breads - the Jamie Oliver recipe I think. We would have had to have HM marmalade with the chipolatas though...

    I have some lamb out of the freezer to use today - last two cutlets from last year's half lamb. Plan to have some HM and some shop-bought veg

    Hi all, thanks for directing me to the thread @Suffolk_lass. I have two freezers full of food, full cupboards and a small under the stairs stock pile so I'm good to go with reverse meal planning I think. Some is out of date I know from when I bought during covid shortages, but hopefully still good. I have to pull out everything under the stairs later anyway as the gas man needs to get in there tomorrow so will see what's in there. 
    It's been some time since I meal planned, we have Sunday roast left overs tonight so I'll plan for the rest of the week later x

    Picked up six leeks on Olio recently so made a huge leek and mushroom lasagne which did two meals.  The remaining leeks will go in leek and potato soup tomorrow to use up some soft potatoes.
