  • Tonight is a stir fry night so a perfect excuse to use up some of the veggies we have like half an onion, a courgette, pak choi and half a carrot.

  • We've also got stir fry tonight - bought some "kit" (noodles,  bag of prepped veg and sauce) for DS to have but he just eat the chilli I left, both nights, while he was cat-sitting last week - so it needs using!

    I also have more prepped bags of courgettes for the freezer, and half a dozen large butternut squashes on the windowsill, drying and yellowing in the light, with three good pumpkins, collectively these will see us through winter

  • Yum - your squash collection does sound tasty! 

    I used the last of a butternut squash last night along with an aubergine and (of course) some courgette roasted last night to have with...well, it was going to be couscous until I found out that the new box I thought we had, we hadn't! Instead used a handy sachet of mixed grains from the larder (love those, SO useful for situations like that one last night!). Added a couple of eggs each as the protein component rather than the halloumi as they needed using. 

    The last two eggs from the box will be hard boiled for sandwiches tomorrow. 

    Tonight I plan to do the lamb chops, probably along with some quick-roast tatties and some veg.

  • Think I might pick up some squash when we're back from holiday, will really put me in the autumnal mood.  Fridge is starting to look a little emptier which is good.  Today I'm using up last week's tomatoes for lunch by roasting them and then putting on toast with the last of the light cream cheese we have and then dinner is ham and leek hash using leftover gammon from the weekend and some more of the potatoes from the garden.

    Lots of pick your own pumpkins and squashes at roadside stalls if you take a trip in the country (near us, anyway).

    We had stir-fry last night. Very tasty and one portion left so tonight, one will have chilli and the other stir-fry leftovers. Another day of no spend here.

    For the first time in years, we have no meal plan! (we also are without a fridge atm - yikes!)

    Meals are currently take-away or whatever we can cobble together from the stores and newly frozen meat & veg!

    Dinner tonight was chicken meatballs with pasta in a porcini mushroom cheese sauce - a light salad on the side.  I'm amazed that OH is now able to be creative with his cooking - a few years ago he would have panicked without a recipe!

    Got a lamb and chickpea dhansak out of the freezer for dinner last night but as we'd had a very late lunch neither of us was particularly hungry so just had some crackers with HM hummus in the evening so dinner tonight will be the curry and some rice.  This of course means that something else can stay in the freezer for another day!

  • Yesterday I managed to use up the last portion of chickpea curry that was in the freezer with some rice.  Today, lunch is going to be the last of the prepped salads I made earlier on in the week and dinner is the classic sausage and mash using up some sausages from the freezer, potatoes and frozen peas with some gravy.

    Tomorrow I'm making a big batch of chilli that will give a few portions for the freezer which will be dinner for when we get back from our trip next week so I don't have to resort to takeaways.

  • Last night was “green & red tagliatelle” for us - absolutely no specific recipe but sautéed courgette, runner beans and Brussels sprouts with some tilted spinach for the “green” - chunks of chorizo for the “red” and a couple of cubes of wild garlic butter and some pasta water sloshed in to make a very light coating of sauce. Surprisingly delicious allowing for the cobbled together nature of it. Literally as I was sorting out the cooking of it though MrEH was picking more beans! 

    Today I need to slice and roast the remaining aubergine, and possibly blanch the remaining sprouts too to freeze those. We’ve a few weeks now with no veg box for various reasons so I’m keen to ensure no waste from the last of the previous one.

  • Sounds like it was the day for it yesterday - we had curry from the freezer too!  HM burgers, wedges and corn on the cob tonight for Friday night fakeaway.  I've also just picked another two boxes of blackberries so might make a crumble.  Enjoy your weeekend everyone!
