    Well done on the inventory @CCW007 ! I did much the same this weekend & have a much clearer idea of what needs using up first from both the freezer & fridge.  It's amazing how easily extra prepped veg gets popped into the freezer, so I'm making efforts to include it in the meal plan.

    Last night's dinner was our old stand-by favorite of pan-fried pork shoulder steaks with gravy, cavalo nero champ & steamed carrots!  It's one dinner OH can do from memory and turns out wonderfully every time.

    I had grand plans of bringing in snacking bits and lunches to the office, but the weekend seemed to fill up & the babybels, dried fruit & almonds didn't get packed up, nor any leftovers!  Oh well, another lunch from Pr3t across the street, with the comforting thought that at least it's healthy - will do better next week!

    That's funny I was going to make a mushroom stroganoff yesterday, but didn't realise it was made with creme fraiche not cream so it will have to wait. 

    I made a roast dinner yesterday and we're having the leftovers today with some out of date Quorn fillets that were in the freezer. I need to go through the freezer and see how much is out of date.

    We have half a roast chicken to process today. I'm going to make a pie with most of it. I also have half a pot of stock to add to things, and the last of the most recent batch of squash soup to use up (2 portions). DS coming for lunch today so I might do the pie for then and add sweetcorn and peas to it so that the meat and two veg thing is there. Then DH and I can have soup this evening before I rush out for book club

  • Hi folks, mind if I join the thread? I'm trying to use up what's in our stores and reduce needless shopping. I pulled a chicken out of the freezer last night to defrost for cooking on Wednesday. I'm planning to spatchcock it then season it with harissa, cumin, lemon, rosemary, thyme, marjoram, onion and garlic. It'll be a nice change. There's also some broccoli, half a zucchini, and an eggplant to use up so I'll roast those too and cook either couscous or basmati rice. The chicken's still frozen in the middle so I might just spatchcock the thing now in order to hasten the defrosting process. 

    I'm quite looking forward to this meal. It's a lot better than picking at some oat cakes and butter out of boredom!
