I also just put my spinach in the freezer as it is.
I break off bits to put in omelette, scrambled eggs, toppings on pizza, in pasta and currys.
I buy it fresh for the weekend use, I like a muffin with a fried egg and spinach, any leftovers go in the freezer.5 -

Same as denise, I just buy frozen spinach as I can't be bothered with dealing with the fresh stuff most of the time

That being said, OH made an AMAZING veggie red curry yesterday - this from a man who doesn't do vegetarian or curry - LOL
He followed a 3-2-1 recipe from the doctor's kitchen utoob video & we served it with rice. The spinach is now in the freezer so now for my next question. Do you just blanch it from frozen?

I like my spinach chopped so defrost slightly and then then chop with a sharp knife before cooking so really depends on how you are going to be using it. If you are just going to be cooking it to eat as it is then you can probably just cook from frozen but I tend to use it in curries or scrambled eggs which is why I like it chopped so it stirs through better. I find it tends to clump if I just chuck it in frozen.
Not sure that really helps you though @ajmoney.

Using up half a bag of stir fry veg from the freezer for dinner tonight. Making a beef in black bean sauce with noodles so everything is from freezer or store cupboard.
