    Been there with the over salty gammon stock!   Makes a big difference if you can soak it in a large pan of cold water overnight and throw the water away.  Even soaking for a couple of hours can make a difference.

    Two ways of using up dribs and drabs of veg are pot au feu or frittata.

    We discovered the Mlekovita Gouda and Tylzycki cheese slice twin pack 250g of each for £3 in Morrisons. As well as being handy for roll-ups and sandwiches, the cheese slices are awesome, like Mozzarella, in frittata. Some cheeses don't taste salty when 'raw' but are really salty when cooked. The Gouda and Tylzycki slices aren't so they would be good sliced into strips on home-made pizza or used in toasted cheese sandwiches. £3 for half a kilo is a really good price. 

    Denser veg will freeze better than celery and cucumber. They have a high water content and their cell structure gets destroyed. Celery keeps for weeks in the salad drawer.
