You need to find out exactly what this is about, otherwise everyone is guessing. Please note, we are not a legal advice forum. I personally don't get involved in critiquing court case Defences/Witness Statements, so unable to help on that front. Please don't ask. .
I provide only my personal opinion, it is not a legal opinion, it is simply a personal one. I am not a lawyer.

I was just upset.. this letter is about a car park fine in Morissons 5 years ago.
It is not a fine, it is an invoice from an ex clamper, have you not read the newbies at the top of the index page?Nine times out of ten these tickets are scams, so consider complaining to your MP, it can cause the scammer extra costs and work, and has been known to get the charge cancelled.
Parliament is well aware of the MO of these private parking companies, many of whom are former clampers, and on 15th March 2019 a Bill was enacted to curb the excesses of these shysters. Codes of Practice are being drawn up, an independent appeals service will be set up, and access to the DVLA's date base more rigorously policed, persistent offenders denied access to the DVLA database and unable to operate.
Hopefully, when life gets back to normal, it will become impossible for those scammers who are left to continue their vile trade, but until this is done you should still complain to your MP, citing the new legislation.

Just as the clampers were finally closed down, so hopefully will many of these Private Parking Companies.

I dont want to make my grandmother sad by having a bailiff at the door
Elms did something similar in Nottingham recently whereby the case was halted by the court last year.
The person then got a filthy letter from Elms saying she had a CCJ and demanding nearly £300. There never was a CCJ ??? The judge gave Elms legal such a battering that the "Elms !!!!!!" was probably black and blue for days. Elms have proven themselves to be a complete joke.
So, check if you have a CCJ FIRST. If not, then you ask Elms to provide you with a court case number, and date
Due to the virus, doubt they will call as Elms are not an essential to be wandering the streets. But, if they do knock, you call the police because with the info provided, you cannot be expected to know what this is all about. The Police by the way happily escort these types off the premises3 -
If the letter is addressed to YOU, then your Grandmother is not involved at all.3

Yes I will do this, I hope i dont have to call the police as my grandmother would get worried. If they turn up i will tell them to leave my premesis
Don't worry about it, I suspect from what I know that Elms have turned in a rogue trader and as such act illegally3
