My budget was actually high this month at £350 - I'm now splitting into two which is my food shopping and then what I'm calling household shopping - this includes all things like lightbulbs, batteries, cleaning stuff, any bulk offers etc. I have £8.18 left in Household and £63.27 left in Food. I'm actually staying at my parents at the moment while I finish recovering so I've just been giving my mum £20 here and there for groceries even though she's insisting I don't need to, but I don't want them to be out of pocket either!
Sadly I wasted a heck of a lot of food this month, I'd just done a big food shop when I fell ill and lost my appetite completely, then of course ended up in hospital... 2.5 weeks later let's just say when mum and I went to my house to feed my animals we cleaned out the fridges and it was unpleasant at the least!I’m a Forum Ambassador and I support the Forum Team on the Old Style, Crafting and Techie Stuff boards.If you need any help on these boards, do let me know. Thanks for the well wishes everyone, I am on the road to recovery; I've been signed off for another couple of weeks to allow me time to recover before I start work again (from home). It was absolutely terrifying in the hospital, a lot of people on my ward died. I can't stress enough to try and not catch it!
I'm staying at my parents for a few days (who have both had it mildly) while I recuperate enough to go home so I've been doing the evening meals for us all.
Last night I used up some vegan fish fingers that had been in my fridge at home and were a day past their BBE - for my dad I made some chips for him to go with them and broad beans which are his favourite! Me and mum had a mix of sauteed veggies with loads of garlic, that I mixed quinoa cooked in stock through, and lemon juice, and then plated on some salad leaves and topped with the fish fingers - it worked quite well!
Dinner today is a stir fry - I'm doing sriracha-soy tofu baked in the oven in cubes (or else my dad won't eat it if it's in bigger pieces lol), and I'm using up a load of veg we have in including mixed peppers, loads of mushrooms, some mange tout and baby corn, broccoli and spring onions, so I'll stir fry those and add teriyaki sauce, and serve with wholewheat noodles and the tofu, topped with some toasted sesame seeds and fresh coriander (no coriander for dad!)I’m a Forum Ambassador and I support the Forum Team on the Old Style, Crafting and Techie Stuff boards.If you need any help on these boards, do let me know.
