I've just called them. They HAVE changed this so any new savings accounts should follow the new process though clearly it can't matter that much given what you've experienced.t1redmonkey said:

I opened the 5.5% and took a screenshot of the confirmation screen, from which I copied and pasted the details into online banking to make the payment. It still said Principality Building Society as the name and to select business, but this time I got no COP match. I can’t recall that happening before, so a change half-completed maybe.1 -

Thy have changed their guidance but you can use any name you wish. You just won't get a COP match if you don't follow their guidance but so long as the sort code, account number and Reference are as per Principality's advice, your money will arrive alright.
The Reference Number for Principality accounts opened in the last hour or so is not recognised in the COP checking yet, so if you want to pay money in today, you might have to ignore the COP result (where you can - - - Santander, for instance, unhelpfully won't let you make any payment to unknown Reference numbers)

Just paid some money into one of my Principality regular savers using my name instead of Principality and it went through. My accounts now all say to use my name though I imagine both options will work.2

I paid into the new issue 35 as well this morning using the old process though (not a standing order), and like I said it's already credited without any issues.dekkard said:

So I opened issue 35, in the opening process it gave me the old instructions for making a payment from another bank, I.e business and pbs, however if I click the link in the email it gives the new instructions as in my name.dekkard said:

Wouldn't be an ideal world for me. Whilst I am forced to use COP, I am more than happy to ignore any mismatch when I am certain that I got sort code, account number, and Ref (where applicable) right.

Not so easy for me! - Had to post two different ID documents. Obviously, whats acceptable for some financial institutions is not acceptable for others.
Got my user ID at 10am.
Am I right in thinking they use the same system as Ford Money & Gatehouse?, seems my user ID for those are very similar.0
