Crazy Cat Lady Chapter 4 - The Aftermath

Freezing single portions can be really useful, CCL. We often have jacket potato night so that's potatoes for two, but we do a freezer dive to top them with whatever we fancy. I've got my eye on a single portion of Mr F's lovely quorn curry for next time, but I also like really simple toppings like tuna melt.
Re cheese..... no need to waste it because it freezes. It will be fine for topping pasta bakes, cheese on toast, etc. Stale bread is fine for toast & breadcrumbs..... but even I declare myself beaten in the food waste stakes if its actually started sprouting fur!

If you’re going to freeze cheese try grating it first. You should then just be able to take a small bit out of the freezer to use when you need it. I always freeze bread as well and just take however many slices I want at a time. They toast from frozen or only take a few minutes to defrost if needed for sandwiches. Keep going you’re doing great 😄 xxslowly working towards being MF one small over payment at a time :T11

We are without a kitchen at the moment whilst it's being refitted and I'd forgotten just how nice packet mash can be. Just made up with boiling water is bland but a knob of butter and a handful of grated cheese really makes it yummy. Might be good for DS if you're having something else and don't want to make mash from scratch,
Do you have a slow cooker? Bunging in the stuff for a chilli/stew/curry etc before you head off to work could be a great time and sanity saver. I've been using ours to cook a whole chicken whilst we're ovenless.7 -

I usually love to help out with a recipe, CCL, but I don't know what 'Chinese Curry' is. I'm sure somebody will though. Defo worth making if everyone likes it!

Would love to help, but we get ours out of a packet, just add hot water, or out of a paste pot, again, just add hot water and stir. Like gravy. Makes chip shop style chinese curry sauce. Goldfish brand/Mai Mai/Sharwoods from any supermarket.

Ohhhh, you mean 'Chip shop' curry sauce? Light may be dawning..... That sort of light brownish stuff that people pour over chips? I can make that. I'm sure you could make it into chicken curry by just adding chunks of chicken leftover from a roast dinner, if that's the stuff you mean?
Might still be confused though, as didn't know it was 'Chinese'?
