What a great thread - wish I found this sooner for ideas!
I am about to start making a coconut beer rendang, but still deciding on the side. Zucchini fries or sourdough bread I think. Will post if it goes well, also trying to work on my meal plan for march. Idea being no work lunches out, and no takeaways!3 -
A carrot, onion and chorizo soup. All bits from the freezer except for the carrot. it tastes amazing. hope I can make it again.

I made 10 portions of soup today, lovely. I had plans to make a bean tagine this week (i have purchased the beans already) but they will keep, i will have to hold fire - as i struggled to fit the soup in the freezer. I am getting a bit obsessed with this slow cooker/batch cooking lark.
I had a small 1.5 l slow cooker that I used infrequently as it was not big enough, I asked for a bigger one the Christmas before last (i was thinking 3.5 l) I received a 6.5 l model the scary thing sat unused in my kitchen for 10 months untill I plucked up courage to fill it with good things and create things! I seem to be making up for lost time!Dogs return to eat their vomit, just as fools repeat their foolishness. There is no more hope for a fool than for someone who says, "i am really clever!"4 -
Currently I have a batch of lamb mince (found with a yellow sticker at Morrisons), two onions, a couple of home grown garlic cloves and a few small carrots bubbling away in the SC. It smells delicious. I will cook up some potatoes, mash them and serve as a sort of shepherds pie, along with yellow sticker sprouts. Proper old style British grub.3

@sillyvixen, You didn’t send the little one to a charity shop did you? I had a big slow cooker and got rid of it because it was way too big for a singleton, but I spotted a little 1.5 litre one in a local charity shop and grabbed it. Just right! Using it loads.
anyone know if I can use it to cook Aubergine parmigiana?2 -
I made a great chicken soup in mine yesterday since the whole family has been struck down by the lurgy.
Bub and I will have soup again today and the rest of the meat went into the freezer, packaged up into 100g portions to use in something else.
Chucked the bones back in with fresh carrots and celery (and some frozen celery bits) and a bit of vinegar and now I have stock too!

Can anyone help?
I cooked some flank steak ( very like beef skirting) for several hours on low in my slow cooker yesterday. Unfortunately, it has turned out very tough and chewy.
I'm very disappointed, as I had cooked a double portion for freezing later.
Is there anything I can do to improve it / tenderise it?
