    Looks 1 lane to me!

Yep. Go to the satellite view and that belief is reinforced. There are no lanes marked on or approaching the roundabout, so it's a single lane.

The fact that two cars may fit side-by-side is irrelevant.

I do use my common sense - and get beeped at. Hence my question on here to get some help as to whether the way I use the roundabout is correct or not.

If there's one lane, there's one. If there's two there's two. Are the road markings worn? Can you look at the roundabout on Google Maps to see if there are meant to be 2? If you're confident it's one lane, treat it as such. Select your course (left side of the lane for left, middle for straight on, right for right), indicate, and drive. As long as you're not weaving or dawdling, it's the honker's problem. Don't put yourself in a position where someone will try to squeeze in where they won't fit.
For the purposes of transparency, here's the roundabout:

If you go around this roundabout, they all look like one lane, except for the give way beside the closed road. This has a red Astra on the left side, and some barely visible paint. This has 2 lanes. Badly needs painted though to avoid the confusion you've encountered.
The problem with positioning yourself in the middle of the lane is that your offering no clues to what you are planning to do.

You absolutely are. Middle of the road, no incicators, means 'I intend to continue straight on'.
If your planning to take the first or second exit (on a 'standard' roundabout) then you should keep well to the left, if your turning right then you should keep well right.

If you're going straight on, you should be in the middle of your lane. You're confusing 2 lanes with one. Straight on = left lane, IF there are 2.
Why do people find roundabouts so difficult? Drive sensibly, follow the rules, obey road markings, assume everyone else is doing none of these, proceed with caution.

Yes, the road markings in the above example are abysmal.
