hi, i need a recipie for beef pie or cow pie as my hubby calls it.
i have stewing beef, onion, garlic, leek, spuds, carrots, ready made pastry.

Sounds like you've got the right stuff there
I would cook the filling first.
Brown your meat, then soften the veg in oil. Add some liquid- water and a stock cube/wine/stout/leftover gravy. I'd add a squirt of tomato puree too and some salt and pepper. Cook in a casserole for about an hour and a half, or until the meat is tender.
Roll out your pastry and line the bottom of a pie dish with half of it (you might only want pastry on top, so leave this bit out if you do).Put filling in pie dish and top with pastry, brush with milk or beaten egg. Bake at 200 for 25 mins.0 -

This is how we do it at work, Im a chef and this is probably the easiest and best way to do it. Although just we put the pie mix into a pie dish and lay a slice of puff pastry over the top of it. Looks and tastes great.0 -

Sorry for hijackingOP, but I agree, I tend to do the filling in slow cooker ( for ease) then put pastry on top. In fact last night I rolled out the pastry on a tray, cooked that sperartely then just chucked it ( a la Jamie oliver
) on the top.

I prefer it that way too - if you put the pastry raw on the pie, it tends to get soggy underneath.
A good dollop of beer works well with beef for a pie (Guinness-type I find best).0 -
Just thought id share with you my beef pie recipe my mum used to make and now i make for my family.
You will need....
Diced beef
3 carrots
2 large onions
half a tub of mushrooms
Tin of marrowfat peas
4oxos
Shortcrust pastry
Dice the beef up and put on to boil with 2 large chopped onions ( sliced not diced) Boil for a hour and a hal and keep the water topped up to quarter of the saucepan.
While this is cooking boil carrots and mushrooms intill soft.
After a hour and half add 4 oxos to the beef , the water should be still quarter of the way at this point. And add the carrots and mushrooms and leave to simmer for half hour intill sauce thickens.
5 minutes before you put the sauce into oven dish add the tin of peas and stir.
Put into oven dish and add some short crust pastry.
Put in the oven for 20 minutes on a medium heat and serve with roast potatos and mushy peas or cabbage and gravy.

Sounds scrummy but is there an alternative to using 4 oxos?0

3 oxos lol well thats what i do 3 or 4 lol, um im not sure really gravy granuels
But i would say oxos as it has great flavour and i dont think anything else would tase that scrummy.
You could also change the beef and beef oxos for chicken and chicken oxos0 -
Made this for dinner today and it was delicious, I did only use 3 oxos but added some bisto to thicken up the 'gravy'. The meat was lovely and tender and it was a big hit with hubby so will definitely be making it again.
