It's much the same, but there are variants made with yoghurt too. I'd guess you could use it in much the same way as cream cheese... he sez. For once I am soooo organised.
Comes from the Australian Woman's weekly and although I confess not to have made it their recipes are very reliable.
Baked St Clement's Cheesecake
60g margarine
180g ginger biscuits crushed
500g quark
125 caster sugar
2 eggs
Grated zest and juice of 2 oranges
Grated zest and juice of 2 lemons
100 g dried apricots
Preheat oven to 150C. Grease a 20 cm. loose bottomed deep cake tin.
Melt marg, mix with biscuits and press in the bottom and halfway up the sides of tin
.Bake for 10 min.
Beat cheese, sugar, eggs and orange + lemon zests + juice until smooth.
Stir in chopped apricots.
Spoon on cake tin. Bake for 40 min.
Turn oven off and leave to cool in it for 1 hour.
Chill for 2 hours b4 serving.
Decorate with orange + lemon slices.

Green chilli and onion dip
The beauty of this dip is that although it tastes really rich and creamy it’s surprisingly light in calories. (Quark, a virtually fat free cheese-like product from Germany is only 70 calories per 100g compared to over 400 calories for cream cheese.)
250g Quark
125ml semi-skimmed or skimmed milk
1/2 a small onion, peeled and very finely chopped
1 clove of garlic, peeled and crushed or 1 tsp fresh garlic paste
A good few shakes of Tabasco Green Pepper Sauce
Salt
Tip the Quark into a bowl, mash roughly then work in the milk until smooth. Add the finely chopped onion and garlic paste then season with green pepper sauce and salt to taste. Serve with strips of raw vegetables such as carrots, celery, cucumber and peppers.
* You could add some finely chopped fresh coriander if you happen to have some handy0 -
You can use natural yoghurt and creme fraiche as a lower fat and quick and easy white sauce so I think you should be able to use Quark in the same way.
All you need to do is add some grated parmasan (I use any old cheese) heat it up (in do it in a pan but you could probably do it in the micro) and pour over lasagne/ pasta/ moussaka anything that requires a white sauce.When life hands you a lemon, make sure you ask for tequilla and salt0 -

Years ago as a student I lived for a year in Germany as part of my course and the family I stayed with always had Quark Cake. Their Grandma made it and it was a mixture of quark, sour cream, eggs, flour and sugar with lemon and sultanas in it all on a sort of shortcake base. I cannot remember the receipe and the few guess at it attempts I have made have been disasters! Does anyone know how to make it? I have looked on the receipe index but couldn't see it. I have found receipes on the net for Yorkshire curd tart but that isn't it.... I bought some quark reduced to 10p in Tescos on Tuesday and really fancy making it!! Failing that - anyone got ANY quark receipes?Jane

if you Google 'Quark Cake' there are quite a few recipes that sound similar to the one you describe, all with slightly different ingredients, too many of them to post links
have a look & see which one you think is most like the one you remember
