arghhhhhhhhhhhhhhhhh flat top muffins AGAIN - I am now certain that its the fan oven that does it as its never happened when I use the top oven - but prob is that top oven doesn't seem to feel very hot IMO - need a thermometer to check really.
Anyway, am sure they will taste good but I don't like the look of flat topped muffins
Pre-heat your oven to about 230ºC. Make the muffins, stick them in the oven and immediately turn it down to 200ºC and cook them for the 20 minutes or however long it takes them. The initial burst of heat should help them rise nicely.
Also to SB44 - Despite what Delia says, I never ever ever bother sifting flour for muffins (in fact I barely ever bother sifting it for anything). Never noticed a difference.0 -

I love cinnamon & this is one of my favourite cinnamony recipes
Apple & Cinnamon Muffins (makes 10-12)
9oz/250g plain flour
3 teaspoons baking powder
1/2 teaspoon salt
2 good teaspoons cinnamon
4oz/110g white sugar
1 egg
5 fl oz/150ml milk
3 fl oz/90ml oil
6oz/170g apple, peeled, cored & finely chopped
a handful of chopped raisins and/or walnuts (optional)
optional topping
2-3 Tablespoons soft brown sugar + cinnamon to taste
1) preheat oven 190-200, put paper cases in muffin tins
2) in a large bowl, sift or stir together dry ingredients, except sugar, then stir in sugar
3) in another bowl or jug, beat egg, then stir in milk, oil & apple
4) pour all wet mixture into try, stir until just combined (the batter will be thicker than usual, the apple will add moisture as it cooks) gently fold in raisins/walnuts if using
5) spoon into cases, sprinkle tops with cinnamon sugar if using
6) bake 20-25 minutes until tops are lightly browned & spring back when touched (start checking after 20 mins, you don't want to overcook them)
there are recipes for cinnamon doughnut muffins in the posts above, but I haven't actually tried them

I'm having a muffin disaster this afternoon :eek: I've made choc chip orange muffins for my son and they haven't really risen. They've kind of turned out a bit flat and fell out of the sides of the cases. This happened last time and although my son thinks they are great (like mushroom clouds, he says) they are still a bit pants. All the recipes I've checked online have nice pics of proper looking muffins. Anyone have this problem or know what I've done wrong... twice?

I read on an American site to raise the temp really high when you pre heat the oven, put the muffins in and turn it down to your normal temp.
Although the recipes I have used have said cook at 190deg I have cooked at 170deg as I have a fan assisted oven BUT, I preheated first to about 220deg then turned down to 170, this quick blast is supposed to help them rise.0 -
