yes, I substituted chopped chocolate for the chips in the original recipe, initially because it was cheaper, but now I find I like the chunks better
I'd tried to make muffins before with no success, but since I got that book I can make great muffins, even though I say so myself
there are a lot of much fancier books around now, but that one gives you all the basics you need to get started

Before I order it which edition do you use the 2001 or 2008 one? I see that one person says the recipes in the new edition are slightly different in that they contain more sugar than the earlier book.0 -
I have just been reading a few reviews about the book at Amazon and it sounds impressive so I am going to order it.
My husband can't see how many variations of sweet muffins there can be (he doesn't want to try savoury ones, says muffins are meant to be sweet), but I am going to ignore him (nothing new there) and order it.
I'm with your DH thereI use Delia's basic muffin recipe, then substitute a similar weight of alternative ingredients for the blueberries and nuts
To that recipe I use one mashed banana and some nuts of choc chips, and they come out great :T

my daughter & I made fudge muffins, basic recipe with fudge chunks in, then when they came out of the oven we glazed them with sugar syrup & sprinkled on tiny tiny miniscule cubes of fudge
I couldn't eat them, far too sweet for me, but the folk who did try them loved them0 -

actually, I just checked mine & it's the 1996 edition, I think it was probably one of the first books (if not the first) to show how to do American muffins properly, loads more have been published since then
I did a search on Amazon & gave up counting at 25, so there's lots of choice out there if you don't fancy this particular one
PS ... a tip when choosing a book, if it's one that has no reviews on Amazon UK, try searching for it on Amazon US, quite often you'll find some comments there
PPS ... although it's good for reviews, quite often Amazon isn't the cheapest place to buy a book, check HERE first0 -
Well, I made the banana ones from the book this morning and my husband loved them.
To be honest I was going to put some choc chips in there but forgotso although they were tasty, they could have done with being a bit sweeter for me as I do have a sweet tooth.
I remembered to sieve the flour today although I only did it once and I have read somewhere that they will rise more if you do it twice.
I need to go and buy a muffin tray though as I used one of those that you put paper cases in for fairy cakes so the muffin cases didn't sit in them properly.
They did rise but would rise a lot more if I get a proper tray as they tended to go outwards rather than upwards due to lack of support.
I have half a punnet of strawberries left in the fridge that need using up, does anyone know if I use them in the same recipe instead of the bananas they will be ok?0 -
I've never tried strawberries in muffins, but I have a book that uses them in some recipes, pureed in 1 & chopped in the other 2
so I don't see why you can't give it a try

I have just seen some Prestige muffin trays in Argos for £7.99 and you get a 2nd bakeware piece for half price so I think I may go for the Prestige loaf tin, both for just over £10.0
