    I am going to order the book now from WH Smith and get it delivered to store as that is free and if I order the 2001 version instead of the 2008 one it is cheaper ie £3.95 deliv to store.

    Can you use frozen raspberries in muffin recipes?

    We have a few in the freezer and after having such a success with the fresh strawberry ones, along with the carton of strawberry yoghurt, thought I would try raspberries.

    Here is me thinking I am going to cut back on the muffin making as I can't stop eating them and I have just reserved 4 muffin making books from the library!

    Another muffin question. I read on Delia's site that you should double sift your dry ingredients when making muffins, do others do this or does it not make that big a diffrence?

    Hi sb44,

    Yes I always use frozen fruit in muffins. Don't defrost the raspberries, just use them straight from the freezer and add them to the dry ingredients so that they get coated in flour which will help prevent them from sinking.

    I never double sift anything....life's too short ;) and my muffins rise well.

    Has anyone tried Rum Muffins?

    I just found this vid and although he uses a cake mix I was wondering if anyone had used the basic idea, especially with the rum sauce at the end.

    Could these be a way of making a Rum Baba type of muffin I wonder, I used to love those in the 70's.

    arghhhhhhhhhhhhhhhhh flat top muffins AGAIN - I am now certain that its the fan oven that does it as its never happened when I use the top oven - but prob is that top oven doesn't seem to feel very hot IMO - need a thermometer to check really.

    Anyway, am sure they will taste good but I don't like the look of flat topped muffins :(

    I was experimenting again today and had a go at making morrello cherry muffins.

    I used the recipe from http://www.cherrytreepublications.co.uk/articles/banana-muffin-recipe but used 140g of a jar of cherries instead of bananas. I also used 90g of a Tesco value black cherry yoghurt instead of the milk. It was really dry so I added a bit of milk but I don't think I added enough. The mix was really thick and cakey like, I managed to fill 9 large muffin cases. They were nice but a bit too heavy I think, more like a cake than a muffin.

    I will cook them again though but add more milk next time.

    The cherries were 99p for a 640g jar from Lidl if anyone fancies giving them a go.

    PS.

    My husband had just tried one and said they aren't dry like a cake but half of one would be enough, def more milk to be added next time.

    Whilst I am waiting for my Susan Reimer book to come through, I had a look at the local libraries online.

    I have reserved 4 different muffin books! :D

    My husband is going to pick the first one up on his way home tonight, I don't feel guilty as he has to walk past the library anyway. ;)

    It's called 100 Magnificent Muffins and Scones can't wait to read it later.
