    Does anyone use Nielsen-Massey Pure Vanilla Extract in their muffins?

    If the recipe asks for 1 tsp do you use less when using this extract as I have read that it is quite strong comared to the cheaper variations?

    I normally buy the cheapo versions like this below but thought I might splash out on the more expensive one just to see the difference in taste.

    I use the more expensive vanilla exclusively. I probably do use a little bit less than if it was the cheapo stuff, if a recipe wants 1 tsp I tend to just fill up the lid of the bottle and throw it in.

    It's worth forking out for, it really does have a much better taste.

    I did read somewhere that if you put a tiny amount on your finger and rub it on a light bulb it will give off a lovely aroma and saves you buying air fresheners that are full of nasties.

    Am I missing some magic ingredient in my blueberry muffins?

    I made some more blueberry muffins tonight following the Susan Reimer basic muffin recipe.

    I did use less sugar than I normally do, I normally use 5oz but I used about 3½ oz as she says you can use between 3 and 5oz.

    The thing is, although they were very nice texture wise and I did use a better quality vanilla extract than I normally do, they didn't have that sweet 'blueberry' taste that shop bought ones do.

    Do you think it may be an additive that they use to add extra flavouring?

    The choc chips ones that I made with 3oz choc instead of 5oz were brilliant.

    I'm wondering if it could be the blueberries themselves which aren't as tasty as they could be.

    Are blueberries normally tart tasting as these ones tha I bought from Aldi are a bit tasteless.

    Ive got a few bags of muesli and granola and I would like to make some muffins with them.Ive got a vegan recipe ,but seeing as im not making them for myself I can add eggs

    Any suggestions?

  • I've never made muffins with muesli so cannot help you with that but I have substituted muesli for the oats in Twinks HobNobs and they came out really well.

    I used porridge packets before for the muffins, worked well.

    Does anyone have a recipe for savoury muffins? I would like to make some with pancetta, or similar, and not sure how to adapt the recipe.

    The recipe I use came from MSE, it is 9oz of flour, 3-4 oz of sugar, tablespoon of baking powder, 8 oz of milk, 3 oz of oil and 1 egg. I then add chocolate/dried fruits/berries/etc.

    I would need to cut sugar, but is there anything else I need to add or subtract?

    Does anyone have a tried and tested recipe for rhubarb and custard muffins? I love baking but I've never made muffins before!
