I use a delia smith receipe. Here is one of the ones on her website:

I tend to use the basic recipe for 6 man sized muffins (in her summer collection) and add any fruit to it. I made some yesterday and can't remember all the quantities but I used 1 egg for 6 large muffins. Really easy to make and taste lovely.0 -
Oh, I also definitely recommend using muffin cases, otherwise you have to spend ages greasing the tin, and ages washing it up.0

3 Large Bananas
2 1/2oz Marg
10oz SR Flour
1 tsp Baking Powder
1 tsp Vanilla Essence (or Almond or none)
5 tbsp Water or Milk
Mash the bananas in a bowl with a fork, blend in the marg and sugar with a wooden spoon. Stir in flour, baking powder and then add water/milk and essence. Pour into 2lb loaf tin and cook for approx 60mins at 180c/350f until cooked and golden on the top.
Leave to cool and enjoy (or as in our house wolf it down as soon as it's out of the oven). :rotfl:Panda on My Shoulder

Oooh I love cooking, especially sweet stuff, but I am *terrible* at making muffins for some unknown reason! Must check that out!
