    Super simple, serves 4, Syn free

    1 onion, chopped
    2 celery sticks, chopped
    1 carrot, diced
    2 tsp mild curry powder
    500ml chicken stock
    100g dried basmati rice
    400g can chopped tomatoes
    2 large skinless boneless chicken breasts, diced
    (I used 4 thighs)
    4 tbsp chopped fresh coriander, plus extra to serve

    Put onion, celery, carrot, curry powder, stock, rice and tomatoes into large lidded saucepan and bring to the boil. Reduce the heat to low, cover and simmer for 30mins.

    Add the chicken and coriander, and season. Cook for 8-10 mins, or until chicken is cooked theough. Scatter over extra coriander and serve.

    Had a good holiday even though the weather wasn't brilliant for most of it. Had a couple of warmish sunny days to start and the day before we came home was also sunny but also very windy!

    Done my menu plan for the rest of the month so should be able to keep on plan.

    Today's plan:

    B - bacon, pepper, shallot & mushroom omelette
    L - leek & potato soup - have made a big batch so will be freezing some and having another portion this week but can't remember without looking at my plan which day!
    D - Butternut squash & chickpea curry (from freezer) with brown rice

    HEA1 - milk
    HEA2 - 2 Extra Light Laughing Cow + extra milk if needed
    HEB - 1 slice of bread with the soup; 2 Ryvita this evening

    Syns - Had a Lotus caramelised biscuit with my black coffee this morning - 2 Syns

    :wave: I was MIA yesterday, enjoying my birthday.:D Despite Storm Gareth, I had a lovely day. I stayed on plan during the day until cake and bubbles at teatime and then a meal out with DH in the evening. Lots of SW friendly parts to my meal (prawns, salmon) but the wine syns and other bits (avocado, fried courgettes) probably made it very synful.:o


    Back on plan today but I'm out again tomorrow and Saturday. I'm being philosophical about it. I plan to go to WI tomorrow and expect to be a little over target range (going by my clothes). I don't think grace week will be enough to get me back so I'll just do what I can (including pay:() until I can get a proper run at it.


    Good to see you back Denise. Well done for sorting out your meal plan so quickly. Doesn't sound like you've gained much so you'll soon be back in range. :)


    Today's EE plan:
    B: NAS grapefruit, HEB toast, 2 boiled eggs, HEA milk for drinks
    L: HM fishcakes, beetroot and cornichons
    D: salmon, SW chips, tomato, mushrooms, asparagus, cauli steak
    Syns: NONE!:D

    I'm not sure how much more you have to lose but when you get to target, I'd relax and enjoy the 6 nations and then worry about any gain afterwards. As a target member I find provided I get back on plan when an event is over (birthday, holiday etc) then I can maintain.


    Meanwhile what I'd do is save as many syns as I possibly could for a match day. I find it really easy to eat very low syn or syn free so I'd be starting matchday with about 100 syns!:D That's still probably not enough for 12 pints, crisps and a Chinese so you need to prioritise. Personally I'd prioritise the booze:o. First I'd try to put off drinking until half time. I'd have plenty of snacks available like chicken pieces or even a plate of SW chips. Then at Half Time I'd make an enormous stir fry (already prepped) with noodles and perhaps some sweet chilli sauce and then I'd enjoy the beer in the second half.


    You may not lose that week but the 6 nations doesn't last that long so it would just mean taking a bit longer getting to target. Otherwise there's always alcohol free beer.:(

    Evening all,

    Thanks for the info poundsinbucks. Am going to research prices and look to invest in one as I think the whole family will benefit.

    Reporting -0.5lb this week. It puts me at just over a stone loss now, so focussed on getting the next one lost now.

    Meal plan today:
    B - banana
    L - mixed salad, tomatoes carrots, lettuce, cucumber, ham, cheese HEA, dressing (2).
    0% total yogurt strawberries & mango
    D - omelette with mushrooms, bacon, mixed salad (as above), cheese (3), dressing (2)
    HEA2 milk in drinks
    Extra syns: Costa Americano coffee (3)
    One day the clocks will stop, and time won't mean a thing
