I would recommend seeing if anyone else can go with you if the amount you sacrifice to cancel her part is quite expensive. Who knows but it may not be possible to cancel (whether Australian consumer laws mirror UK ones for "mitigating losses" is another question), but you may be able to amend names etc.0

Update : she sent me confirmation of her first payment this morning, however, it’s been transferred to the wrong account (not my bank account). A step in the right direction but I’ve still not got any money!
Was it nearly your account or a completely different account number? The former implies a mistake, the latter imo implies deceit.
You're the one who knows and has spoken to your friend, so....how has she reacted? When telling you she couldn't afford it, saying she couldn't afford to pay it back sooner than 40 weeks, when you asked about the first weekly payment, when it turned out it was sent to the wrong bank account? Is she quite forgetful, unorganised or financially irresponsible? Or is this out of character for her?
I would be mortified if I'd told my friend to book and I then had to tell them I couldn't afford to pay them back as soon as we had agreed. I'd be even more mortified if I then forgot to transfer money to them when I said I would. At the point I transferred to the wrong account, I'd go without whatever I had to in order to pay them again without further delay.
But then, perhaps because I have that attitude towards finances, I'm not in a position where I need to borrow money/can't afford a $1600 (is it same $ for AUD as USD?) holiday! Its the same logic for not going as guarantor - if they weren't so risky to lend money to, they wouldn't need you to be guarantor (or pay a holiday for them) - where you agree to be liable for the entire debt + costs for absolutely no gain or benefit to you.You keep using that word. From reading this it sounds like its going to be a struggle for the next several months to get a weekly payment. Id be cancelling her part, taking the loss of the booking fee etc and moving on. Otherwise you will be constantly reminding her every week for 40quid.0
