    you can protect the sides of your cake by tying a band of brown or newspaper round the outside of the tin shez like you would do with a xmas cake

    both of those cakes look amazing and truly divine
    to my shame im just trotting off to amazon now to order me a copy my excuse is i dont have many cookbooks
    would that be forgiven do you think???

    you have my permission tooties, you can never have too many cookbooks :D just see that you get it at the best price or do like me and get it from the library

  • The main thing I have "realised" with regard to cakes is that a fan oven is not good - I now only use the "normal" oven as the circulated air seems to batter the tops down and stops them rising.

    I have been making my Xmas cakes today but thought I'd post my fav easy moist fruit cake for the group...

    Matt's Recipes
    Auntie Maggie's Moist Sultana Cake
    Ingredients: 1lb Sultanas
    ½ lb Butter
    12 oz Plain Flour
    10 oz Caster Sugar
    1 unwaxed Lemon
    1 ½ tsp baking powder
    Pinch salt
    3 eggs

    Method:
    Pre heat non fan oven if possible to 170 C or fan to about 150 C.
    Put sultanas in a large pan, cover with water, boil for 5 mins & Drain
    Add butter to sultanas in pan and let butter melt with heat from sultanas
    Beat the eggs and sugar well and stir into the pan
    Add rest of the dry ingredients and mix well
    Add zest and juice of lemon, stir
    Bake in an 8” cake tin – middle of the oven -
    for about 2 hours until skewer comes out clean.
    NB: For extra crunch (and calories) sprinkle top with demerara sugar about halfway through the cooking time (if you do it before it will not rise)

    Serve:
    When cool –
    Note: Store in air tight box for about a week if you don't eat it by then!

    yes crazychik it tastes good, kyles dh wanted it for his birthday cake, use a 7 or 8 inch tin though, it was down as 9 inch in the book
    Razra i got the book from the library so dont have it now

    £8.94 in Tesco's now don't know if there's any discount vouchers for book orders on the codes forum :confused:
    Think my Mum would love this one..then I can 'borrow' it and copy out the recipes I want :D
