  • I certainly wouldn't eat any spud that has green on it, as it comes from the same family as deadly nightshade. So always discard those ones.

    Hi guys,

    I have nearly full pack of potatoes that will go off soon. I don't want to throw them away, is there anything I can do with them to avoid this (ie freezing potato meals etc)?

    If there are meals I could do they would have to be heavy potato based as it is nearly 2 kgs and I don't have that of a big freezer. Also I don't have much stuff in as we are going away for the weekend and before then we have only 1 night of eating in (hence why I cannot just eat them), but I could pop to local shop for few ingrediences if necessary.

    Mashed potatoes can be frozen - I tend to make potato croquettes out of left over potato and freeze them. However potatoes will usually keep - it is one of the (many!) things I completely disregard any best before dates on...

    Why do you say they're about to go off - have they gone soft or green, or started sprouting? If not, just put them in a dark place and they should be fine until you get back from your weekend away.

    If they are going soft or sprouty, you could make something like fishcakes which freeze well - I believe you can freeze plain mash, too, although I haven't tried it so I hope someone else can confirm this.

    I'm sure people will be along with more ideas shortly. :)

    They are starting to sprout. Well, they have little tiny sprouts already really.

    i did think it was funny that u were talking about 2kg like it was loads when i buy mine in 20kg bags spuds keeps for ages like others have said, however you could make corn beef hash, or cheese and potatoe pie, or homemade wedges or roasties

  • you could : chop them into chunky chips and bring to the boil in some water, simmer for 2 or 3 minutes, then drain , season and toss in a little oil. when cool spread on trays on a single layer, freeze until solid , then once frozen put in to bags .- homemade low fat oven chips :)

    par boil and roast until almost cooked , then freeze as above - instant roast potatoes for when time is tight .

    bake them in their skins and freeze
