I freeze mashed potato and make cheese wheels with them whcih also freeze.
Make pastry:
8oz SR flour
3 fl oz vegetable oil
3 fl oz warm water
Seasoning
Mix well in a food processor.
Make filling:
1 cereal bowl of mashed spuds
4-6 ox mature cheddar grated
1 onion chopped finely
Seasoning
Roll old the pastry to a rectangle, fairly thin.
S[read the mash mixture over it.
Roll up like a swizz roll.
Cut in slices about 1/2 inch think and sprinkle with a little more grated cheese)
Place them on a greased baking tray and cook in a hot over (200 degrees C) for 10-15 minutes.
Delicious, hot or cold and will freeze lovely.
