As above just cut off the sprouts & you will be fine.
I wouldn't store potatoes in the Fridge. I work for a supermarket and Bananas/Potatoes/onions and basil are the only products that we MUST NOT PUT IN FRIDGE as it severely affects its quality0 -

If you check the spuds daily and nip off the sprouts before they get going, it seems to prolong their useable life. Not sure how you do this with a 56lb bag, but for smaller quantities it is one option.
Any green or part-green ones I chuck out. Too risky.I haven't bogged off yet, and I ain't no babe

Hello all
Let me introduce myself - My name is Nic, I'm 21 and have just bought my first house...living alone for the first time is not what I thought it would be! I have been reading with interest for the past couple of weeks and thought it was time to take the plunge and join
Whilst I'm here, I have a huge bag of potatoes that are just about to sprout beyond redemption! Anyone any ideas on how I can prepare potatoe products...chips, croquettes etc, for the freezer? Not even sure if this can be done!

Not been here long myself so am not the best person to offer advice (although I do know that you can prep veg and freeze in advance so am sure someone will give you details of how to soon!). Just wanted to say welcome to MSE and congrats on your new home :beer:

I never eat potatoes that are just about to sprout or even slightly Sprouted .. I have heard they have a toxin that bad for you ..
Dunno if its true or not, but the mention of the word Toxin was enough for me to only eat fresh potatoes ...
However ... If you store your poatoes in the fridge they last longer without sprouting ...

and came across this ...
If potatoes start to sprout, they can still be eaten. Remove the sprouts and discard. If the potato is still firm, it is good to eat. Shriveled, wrinkled, sprouting potatoes should not be eaten. Green-skin potatoes have been exposed to too much light. A mildly toxic alkaloid called solanin forms in the skin. The green skin can simply be peeled away. Although the remaining potato is safe to eat, it will not be at its best.
so Sprouting potatoes are fine to a point so it seems ... :T0 -
if I have any spuds that need to be used up before they go over I make leek and potato soup or boiling them then mashing them and freezing round spoonfuls on a tray ,when frozen, bung them in a plastic bag and then you always have mashed spuds in portions when you need them .
I never waste anything if I can help it .
