It's not a cooling off period, it's more to do with manufacturer's not wanting to start a factory production order until the order is firmed so it makes sense to wait a couple of weeks to ensure the customer doesn't change their mind or wants to make changes. It makes perfect sense and it's for their benefit, not ours.
In fact the last time I ordered my BMW I was told that this happens and is built into the order process, there's a delay between placing the order and the order being accepted.
We ordered our Cooper S on the Saturday and it was committed to build phase on the following Tuesday. After that it would have been "painful" to cancel the order.
The Merc was probably different though - it took 3-4 months to be built and i dont think there would have been any eyebrows raised if we'd cancelled in the early weeks.
I genuinely dont think its two weeks built in - its just "easier" if it hasnt been committed to the production line. Not a mission they'll sit around for a fortnight if they're otherwise ready to start it before they start a build on the off chance you might change your mind.
I'd have been seriously knarked if they'd said "well we're going to hold off for two weeks in case you change your mind"0
