Since last post spent £5.48 on June budget and £5.22 on bulk.
Today made vegan kimchi and a nutri-brex cake. Though not usually done I put 3 and a half very ripe bananas into the cake and put less rice milk in due to bananas being a wet ingredient. Husband had a taste when I had a slice and basically stated that they should always be made that way from now on. Not surprising as he loves banana bread/cake :rotfl:.

This month has been super busy so far, so haven't had time to update yet! Looks like I'll go over my budget this month as I've already spent £103.07 of my £110 budget (just did the sums, haven't even found time for that till now). Still, the reason it's so high is that I bought lots of organic fruit and veg at the beginning of the month, and I can't really make myself feel bad about that. Will try to be frugal over the next few days so I don't overrun too much!0

Apologies for my absence from the thread, but I’ve spent most of the last week feeling like death-warmed-up, without enough brain cells to spare to post. I have had one of those colds that come in stages: first the tonsils, then the throat and now the stuffed up nose. I think it’s finally easing off.
Anyway, I’ve got four spends to declare since my last post, totalling £20.01. No recollection now what we spent it on, sorry, beyond £5.50 for eggs, a chilli plant and fresh peas in the pod from the farm shop. That brings our spending total to £80.37/£120, leaving £39.73 in the pot.
Someone mentioned scoring a whole load of fresh coriander. You can always do what I do: wash well, chop, and freeze loosely in a large ziploc bag. When a recipe calls for fresh coriander, extract an approximate sized frozen lump from the bag and throw it in to the pot. (Do not defrost.). I learned this trick from an Asian friend, who throws lumps of frozen coriander into curries at the last minute. She says it adds a degrees of freshness to the taste.

Hi all. Just a quick update before bedding down for the night. We leave in the morning on our vacation and I'm leaving a bit of packing to do in the morning. I'm still feeling sick and weak which is unnerving me a bit. I've usually recovered from a cold or sinus infection by now. Hopefully it's alright.
€14.67 at organic store on Monday: potato chips, oatcakes, bananas and a severely desperate emotional food purchase of ravioli in a jar! I haven't bought or eaten jarred/tinned ravioli in about 20 years! I was feeling particularly ill that day and just wanted something sloppy to put in my mouth hole instead of having to conjure up some food. It surprisingly didn't taste half bad. Oddly enough, the organic bananas were cheaper at this store than at Delhaize. Go figure.
€3.80 at Holland & Barrett: bulk macadamias for vacation snacking.

Tomorrow morning I'll make a salad to use up a lot of the vegetables and herbs in the fridge to have for my lunch on the train. I'm also packing some dry sausage, the oatcakes, cheese, macadamia nuts, peanuts, water and some other bits to take down there. OH has already cooked and packed his food for the train ride: Lidl tortilla, cucumber, tomatoes, etc.
I think I'll still record my travel food budget here, if that's alright. It'll help keep me on track and prevent me from dropping €40 off the bat in a French Lidl. :rotfl:

Thanks PipneyJane, I too will be using that idea as have a large bag of frozen C in freezer and didn`t know what to do with it.

I managed to spend exactly £18 today on fruit, butter, oil, yoghurt and a plate and 2 cups for camping. I wouldn't normally include those last two items but I can't be bothered to go and find the receipt and the maths is easier with a nice whole number of pounds. :-)

Small spend today in the Co-op of £2.74 (4 pts milk and a carton of beef spread), leaving £51.01 in the budget with 10 days to go to the end of the month.
When I do next week's meal plan tomorrow I'll be aiming to use up more stuff from the freezer so any grocery shopping for the rest of the month should be for just F&V and milk.I'll be going into town on Friday (for 3 birthday cards) so will have a browse around the market for the F&V - rhubarb and gooseberries in particular.
Thanks PipneyJane for the tip about freezing fresh coriander - I imagine this would work with other fresh herbs too. Hope you feel better soon and those brain cells recover.Be kind to others and to yourself too.0
