    I have done this with some kale. I had too much so I chopped it up and put it in a plastic tub for the next time I make some minestrone. I would throw it in the soup from frozen and it should be fine. My thinking is will you notice it's mushy in a soup lol.

    Wow gem-gem that's a great glut of tomatoes. We had a lot of salad tomatoes and sun gold ripen when the weather was warm but we have about 5 roma plants that all the fruit has developed blossom end rot so haven't had any. I have one huge squash ripe and a couple more on the plant.
    We found a courgette yesterday that had been missed. Popped it on the scales and it weighed 1.8kg :eek: plus another two that are nearly 1.5kg.
    Got a busy day today. Need to make some more plum jam. I also have a YS red cabbage so going to make some braised cabbage and portion up for the freezer. Also having a party tomorrow so lots of food to prep.

    Wow, a courgette weighing 1.5kg.
    Picked more tomatoes today. I told hubby that I wAs going to have a day off from cooking tomatoes. (or from any cooking) but I have just been looking at a recipe for mincemeat fruit cake. My local W@itrose has been selling their mincemeat (from last Xmas I think) for 1/2 price, so I bought two. I have just added some sherry to some dried fruit to start marinading. Hubby bought the wrong sherry so this one is being only used in cooking. I have nearly finished it. So I may end up making a cake.

    I went into Lidl for a bottle of wine, as you do when you have a ton of tomatoes to process somehow. To my absolute amazement at around 5pm there was a £1.50 veg box sitting all alone at the counter. Without a second thought I grabbed it and I am absolutely gobsmacked by what was in it!
    12 large onions
    A butternut squash shaped like a bottom
    3 dozen or so sweet grapes
    2 yellow peppers
    5 packs of mangetout peas
    pack radishes
    4 avocado
    4 long carrots
    11 large tomatoes (needed like a hole in the head!)
    6 peaches
    1 apple
    WOW! I am definitely making more work for myself and have already frozen the grapes and mashed and frozen the two softer avocados. I can see there are bits I may have to cut out of the peppers, but hey! What an amazing buy - how easily I am pleased these days.

    I did some baking on Friday ordinary pastry for OH and my mum and GF using a mix for me. There was a small piece of GF left and I considered freezing it, but was not sure about it so I rolled it very thinly between sheets of cling film and got a sort of circle about 4" dia. put some corned beef and a little grated cheese onto it and made a pasty shape and baked it, tasted so yummy, no wasted pastry and finished a pack of corned beef slices, well pleased.

    If it does not give awful indigestion this will become a regular bake:D

    Confession time :o - I have been doing quite well with using up everything & not having to consign bits to the bin or even the composting bin but I have to report a failure - the lo pasta had to be binned :o - had no space in freezer :eek: So next week’s menu plan will take into account that I need to create some freezer space for los :D Live & learn :D

    I will do better :D

    As I am still on holiday its a bit different for me ,but I am still making sure if I can that nothing gets binned.I made myself a bit of lunch yesterday as DD and family were out and I volunteered to stay with the dogs for a couple of hours.(the maltese terrier gets very stressed in crowds) I had some crackers and blue cheese and several grapes. and left over cake from a couple of days ago with the last of the custard dribbled over it rather than bin it and it was just enough for me I know if DD had seen it she would probably have chucked it,but I was happy to eat it up :)

    Well this week I had a win, a sin and a save.

    So I'll confess my sin first...I threw away some minted lamb chops from aldi because I did't pay attention to the date and freeze them. I kept meaning to cook them but I've been working 10am-7pm without a break time which means I don't get in till 8:30 pm and starving, not having eaten since 9am, can't be bothered to cook and end up eating some microwave trash/bought sandwich (hopefully from the redued section from the shop I work in).

    My win, and possibly my penance depending on how sick of salmon sandwiches I get
    35 small tins of red salmon £0.10 each...BBE 2021
    8 tins skin and boneless mackerel in mexican sauce £0.04, BBE 2021
    1 pack posh seeded crakers £0.09
    1 small tin stewed steak £0.10 BBE 2020
    4 packs of miso soup paste (3per pack) £0.09, BBE 11/2018

    I was shopping with my Granda and he got 15 salmon, 6 mackerel, 1 cracker and 1 steak as well.

    And my save! I couldn't resist some lovely ripe multi hued tomatoes. I was actually at my local carboot where they have a veg stall so wasn't food shopping and so no list/food plan. Got home to find a punnet and a half of tomatoes in the salad draw. Used up some frozen (reduced of course) puff pastry and left over grated cheese from a fish pie topping, caramelised couple of onions and made a delish tomato tart that made a couple of hot meals packed lunches and some for my Granda and Uncle.

    JackiO and WeeMidgie, I've been interested to read your posts about buying quality food (and making sure it's not wasted of course!)

    I'm something of a foodie and cook myself and can quite happily spend quite a lot (If I have it) at a food fayre, local farmers farmers market etc. I consider this my treat when I can. Some people go to the pictures or buy expensive shoes...I buy truffle salt and wild garlic pesto, often these seem expensive but when you take into account how very many meals they really lift It's worth it on my current income.

    I know we can't always have the budget. I've done time making the best of value pasta and 9p noodles. Although even then Aldi/Lidl soy/fish sauce and sesame oil got me through.

    I've just realised I just don't shop/cook like a normal person. I bought two bags of sliced mushrooms from asda for 10p each, huge catering bags from the pizza making section and a large tub of reduced cream. My main ingredients cost about 50p then I make soup with truffle salt, posh mushroom stock cubes, a good slug of Madeira wine and a drizzle of truffle oil to serve. The thing is I only used a small quantity of those expensive store cupboard things and I made a bucket of soup!

    Is anyone else like this? It either all about value or all about taste when they shop?

    I'm using iceberg lettuce at the moment as its cheaper but i seem to have to cut a layer of brown leaves off each time, I'll try and be more adventurous with them!

    I use, admittedly often a bit more expensive, little gem or romaine as I'm the only one eating lettuce and iceberg always ends up thrown out when it gets manky. They usually come in 2-4 packs. I put them in water like cut flowers any keep really well.....I also stick leftovers in my slightly manky left over veg bag in the freezer for soup too.

    My go-to 'nice' food are decent sausages I love old spot bangers from Dobbies as they are around 88% pork, plus I do like decent coffee ,but I economise on other things so I can treat myself to a little bit of luxury now and again, at my age I have few wants or needs and enough clothes to see me out that's for sure . I enjoy my way of life and if now and again a Krispy Kreme doughnut leaps into my shopping bag its a treat not a sin :):):)
